YOUR HOLIDAY MENU? - Christmas, Hanukkah or Kwanzaa

This year, I injured my foot (rolled my foot/ankle) so  didn't put up the large 7ft Christmas tree or do much decorating. Instead, I have a cute 3ft lit tabletop tree displayed in the family room. 

 

 My foot is better so I wanted to make Christmas dinner like I always do, but I wanted to make it easy on myself. There will be only 4 of us, so instead of the big Christmas dinner with ham or beef with all the various sides, I decided to do this chicken dish (Chicken with orzo, spinach and tomato).  It's all in one pan which has the protein, carbs and veggie all included. I might add some sauteed mushrooms to it since I have them in the fridge anyway. If I'm up to it, I'll put together a No Knead Olive bread the day before and bake it Christmas morning. 

 

I'll include a picture of it below, but I'm using boneless chicken thighs as they're more flavorful.  My sister is bringing an Italian antipasto platter and deviled eggs to nibble on before having a tossed green salad, then the chicken dish. For dessert, my son will  be picking up a tiramisu and an apple pie from a place that has great desserts.

I bought a slice of carrot cake, and a wedge of key lime pie (both in the freezer).     

 

I'll probably get a sandwich at the deli, and have ONE of those desserts...

There are only 5 of us for Christmas dinner so we are cooking a prime rib, herb roasted potatoes, green beans and fresh baked biscuits.  DH will make his Kahlua chocolate mousse with fresh whipped cream for dessert.   

 

I just want to share I recently read a tip by Gordon Ramsey to roast potatoes with duck fat or goose fat??   Well I'm no chef so I did a trial run and have to say they came out great!  I was able to find a duck fat spray at the grocery store (it was with all the other oils) so I did a generous spray, sprinkled fresh herbs and added a bit of sea salt and pepper.  Baked at 400 degrees for 45 minutes......... Just wonderful!

@ciao_bella Hope you are back to full health! 

 

I am bringing desserts to my family get together on Christmas Eve so I will be baking red velvet cake and whipped cheesecake. 

 

On Christmas Day, I usually join @Zoe and also do Chinese. Or I have spinach ravioli ready to go!

For Christmas Eve I'm making a tri tip in the crockpot, Ruth Chris sweet potato casserole, and glazed carrots. For Christmas Day we are going to the zoo near us and maybe have Chinese food on the way home.

Brown sugar glazed ham, over-night mac and cheese, garlic mashed potatoes, steamed broccoli, yeast rolls, and sweet potato pie with caramel glaze.  Oh, and cookies.  

 

Holy cow! Typing all that out! That's a lot of carbs!

the meal I had planned to be our Thanksgiving meal will now become our Christmas day meal.

this has been a heck of a year for my family. our Thanksgiving gathering was cancelled because my DH was in the hospital.  we always have our Thanksgiving meal here, almost all of which is made by me. since we've had so much going on for the past few months I decided to do something I've never done before and ordered the Corky's bacon wrapped stuffed turkey breasts and St. Claire side dishes.

I will bake a sweet potato pie and pecan pie and make homemade cranberry sauce.

I really need to keep things simple this year, but still have something delicious.
