Would beef broth work in making bread stuffing?

We don't care for turkey and are tired of chicken so a beef roast is probably what we will have on Thanksgiving. We love dressing however and I wondered why I couldn't make my usual with celery, onions and then use beef broth. Does anyone have an idea if this would work?
