Why did my scalloped potatoes curdle?

I ran out of Wondra flour a couple months ago, so I made a batch of scalloped potatoes with regular flour, butter, and whole milk. They came out just fine, so I didn't bother replacing the Wondra. Last night I made scalloped potatoes exactly the same as last time and they curdled badly. What happened?
