Re. knives

I've recently purchased several knives from Christopher Kimball's Milk Street website

https://www.177milkstreet.com/  that I really love. Not the cheapest knives available but not outrageously priced either. I really am enjoying using these knives - in fact I think those are the best knives I have.

I think it's very wise not to buy sets of pots or pans. When you do, you're often paying for pots or pans you'll never use. I just purchase pans individually so I can get just what I need. Not only is that wise in terms of cooking, if storage is an issue (which it is for me) it saves badly needed cupboard space.

Nightowlz, I love that you have a pressure cooker for backup. I don't, but I'd be lost if my Instant Pot stopped working. Since I discovered pressure cooking and the Instant Pot, whenever I want to make a dish I check to see if there's a pressure cooked version of it. Frequently there is - in fact there might be several recipes for that dish. I check them all and make the one that seems most appealing.

Two adults we use most:

3.5 qt. Le Creuset for soups, small batches

4.5 or 5.5 quart for larger

6 qt. All Clad dutch oven

Half sheet baking sheets

4 qt. All Clad pan

Occasionally a skillet or grill pan

Le Creuset roasting pan

- 4 qt stock pot

- 8 qt stock pot

- 5 qt pot with strainer lid

- 10-12" skillet

- 8" skillet for omelettes

- small saucepan

- 11" low stovetop casserole for Spanish rice, pilafs, etc. (And I use it or a skillet for spaghetti for DH and me. My days of boiling quarts of water for spaghetti are long gone lol.)
