I can't believe it took me I-don't-know-how-many-tries to make a decent pot of chicken soup. Finally, today was perfect! Just chicken (raw chicken strips), potatoes, corn and an onion w/ bought stock. 

 

My last disaster I started with a whole chicken and so homemade stock. I guess it was fine until I substuted a pasta (tortellini) for potato. Well, there went the stock! That tortellini expanded like balloons and I was left with zero liquid! And there went the soup.

I am making sandwich steak with peppers and onions on ciabatta bread and salad with balsamic vinaigrette and bleu cheese crumbles tonight. Have a great day everyone.

I'm making a sandwich with Sliced ham and cranberry, orange relish!  Unusual but good!

Meatloaf, mashed potatoes and green beans.  Mandarin oranges for a snack.

I am making Low Carb Mexican Lasagna today with the usual toppings on the side and Steamed Broccoli .  I might make some Seasoned Cauliflower Rice. If the grandkids decide to be picky, I have some other options for them.

Good morning everyone. Here's did you cook tortillni in the soup?  If you did that was the problem. Cook them in  separate pan and add them later. Your soup sounds good. Yestauday sunny and cold. So far this year we haven't got an Indian summer. We always get a warm period of warm weather but so far we haven't. Last night we had leftover ham dinner, cut of pears. And a few chips and ria had some peanut butter balls.I just made oatmeal for breakfast. I got 6 Christmas trees fixed the branches and today I will decorate them and plug Christmas lights in. It amazes me that Thanksgiving is only a week away. Holidays are coming so fast. My mom use to sayso s the older you get the faster time goes by. I so see what she meant. Have a great day everyone.

Lots of leftovers for next week.  DH made beef vegetable soup last night and we have plenty leftover.  I also bought two packages of raviolis last week and we only ate one.  We are also having chicken thighs with green bean salad and steak quesadillas.  

 

I think I mentioned last week that youngest DD has been passing out quite often.  She is usually only out for a minute at the most but she twitches and her eyes roll back in her head.  She was cleared by cardiology.  On Wednesday she was having an EEG at a neurologist office and they had her do some hyperventilating breathing and she passed out.  They thought she had a seizure so they sent her to the ER by ambulance.  The ER admitted her and she is going through testing.  The neurologist at the hospital thinks she either has epilepsy or convulsive syncope.  Regardless they are starting her on epilepsy medications to see if helps with her episodes. 

 

I missed a lot of work this week.  Not only have I been at the hospital with my daughter but I had an abscessed tooth so I had to take off time to go to the dentist.  I also had work done on my car on Monday and I took the day off to get that taken care of. I also had an eye doctor appointment where I found out I am a candidate for cataract surgery as my poor eyesight can longer be improved with changing my glasses prescription.

Kielbasa, sauerkraut and leftover mashed potatoes.

My goodness, @ninjawife, what a week!  I'm sorry I missed the prior report on your daughter.  I can imagine how worried you must be.  Then to have all the other stuff added to it. You poor thing!  You are in my prayers, and especially as is your girl that the medicine works and the episodes get under control. 

I don't know what we're eating today.  It will be leftovers of some kind.  DH and I have to go back up to Xfinity this afternoon.  I am so UNtechy.  I clicked something and changed something on our account that we don't want changed.  Don't ask because I don't know what it was.  DH is an android guy so he's afraid to make matters worse if he tries anything with my iPhone or iPad, so we're gonna get someone else to fix my mistake.  đź¤¦â€Ťâ™€ď¸Ź. While we're out we'll do a UPS Store drop off and maybe go to TJmaxx so I can get a can of hairspray and see what else they have that I can't live without.  LOL
