Good morning everyone and happy may. Cloudy with a few showers last couple days. Monday for dinner I made mushroom rissotto and Tuesday I made Mexican crunch wraps and I made a pineapple cake with mascarpone frosting. Have a great may everyone.

May 1, what a happy day. The most exciting event of my whole life took place May 1.  Happy May Day and happy cooking day for all.  Hoping us all a happy Cinco de Mayo very soon and lots of good Mexican food.

@Pooky1  Can you share your recipe for Mexican crunch wraps.  Your whole meal sounds magnfique.

DD did not like being at the beach alone so when we came back from the beach on Sunday we brought the cat home and DD followed.  The construction is between phases so there was no construction Monday and Tuesday but they will be back today at any minute now.  They will be removing the front walk and both landings and starting on the portico over the side door.  DD has a fever and is upset she won't be able to sleep.  She is thinking about going back to the beach. Smiley Frustrated  We will have either hamburgers or chicken caesar salad tonight. Ignore the spoiler tags I hit them by accident.

Happy May Day. Thanks @Pooky1  for starting us off. Low 30's here this morning. I am so glad I did not buy my flowers yet to put in pots.

 

Busy morning with multiple errands, so dinner is something quick and easy. Meatball subs on fresh baked bread, with mozzarella and topped with leftover sauce. Side dish of sliced cukes & grape tomatoes.

Good morning!  I'm off my feet for a few days, hopefully no longer than that.  I have plantar fasciitis in my left foot.  It's quite painful and difficult to walk.  Those first steps in the morning are jolting.  I'm stretching the arch, icing it, and have ordered some arch supports.  

Our loveseat delivery happens today, sometime between 10:45 and 1:45., so it looks like we'll be eating a later lunch today.  I don't want to make it and get ready to eat, and have the doorbell ring. I sure hope the men agree to take the old one out. 🤞

 

For lunch, I'm going to dice up the leftover turkey from yesterday, mix it with the leftover gravy, and serve it over some Palmini rice.  I think I'll make some roasted Brussels sprouts to go with it.

@JeanLouiseFinch   Sorry to hear that you are having PF issue.  Ouch.  Making steaks, corn on the cob and cucumber salad tonight.

I went to a birthday party on Sunday, so I didn't cook. Monday, I had baked haddock, buttered noodles, broccoli and a salad.

 

Yesterday, I had a very late lunch with a friend at a restaurant...didn't make dinner, brought DH a meal to go.

 

So, tonight I am making roast turkey breast, dressing (already made ahead of time and in the freezer) mashed potatoes, gravy and asparagus and salad.

 

I cook for my DH.  I am watching my food intake and I am only eating one meal a day...which is a protein and a salad and a green veggie if I make one.

 

I will be eating light  ( one meal ) all summer long.

I'll be making a dish for a church Cinco de Mayo potluck Sunday and plan to make Mexican/Spanish Rice in my Instant Pot. I have a recipe for it but am wondering if any of you have a recipe you especially like for Mexican or Spanish rice - preferably cooked in a pressure cooker. Thanks in advance.

Good afternoon everyone. Nonametoday. Crunch rap supreme we had got it at taco Bell and my wife found a recipe for it.homemade is better than taco Bell. Cook ground hamburger and add a quarter cup of water and taco seasoning. You need tortia wraps corn or flour work.bigger ones work better .once you add everything to it it gets 5 folds to hold it together. Sometimes I have to use a second wrap. You also need.shredded Mexican cheese, jarred creamy cheddar cheese, shredded lettuce, chopped tomatoes, tostada shells. Sour cream or taco sauce or whatever you like with Mexican food. Add some cheddar jar sauce in the center of the wrap, then shredded cheese, then meat, lettuce, tomato, then start folding up the wrap five times. Once its wrapped it should be kinda rough with point's but so nothing is falling out.you may need to use a second wrap if you over fill it and I do that quite often. Then I use a George Forman grill. Spray grill with pam. And grill until grill lines and starts to get crispy. If you have any questions let me know.
