Re: Whats cooking in january?

DH requested chicken and dumplings so that's what I made with mashed potatoes and apple crisp.  He hasn't had a good day and didn't eat much so we have plenty of leftovers.

@house_cat  that looks really good!  Trust me we have had plenty of never again meals.  Lol

@lynnie61  I hope your BIL is feeling better.
Enjoy your evening everyone!

Re: Whats cooking in january?

@2sisters   BIL went to his dr again today.  Gave him a steroid and  said if the cough persists they will get him another med.  His cancer dr wanted to see him to make sure it wasn't a sickness issue with his immunotherapy treatments.  Thanks for asking.  So many people here locally sick.

Uh-oh, @house_cat.  I think we've all been there. What didn't you like about it?

There wasn't anything terribly wrong with it, but there wasn't enough right with it either.

Re: Whats cooking in january?

Picked up my car from the mechanic shop yesterday late afternoon. The bill was $3500... which caused me to immediately lose my appetite.  Turns out the "mechanic" who has been inspecting it for the last three years wasn't actually inspecting it.  It's a good car and I plan for it to be my forever car, so it was worth the maintenance, but a bit of a shock to my system.

Because it was past dinnertime when we headed home, DH stopped and got us a large pizza, out of character for him, but much appreciated.  Half of it is left over, so that's what we're having again tonight.

Re: Whats cooking in january?

@2sisters saying prayers for you and your husband ,lynnie your BIL also , @ Red top , you and your daughters are still in my prayers
@ Pooky I hope Ria feels better soon and can eat
I hope I haven’t missed anyone else
@house cat I love your pictures please continue to post them they all look so appetizing

It’s finally warmed back up to our usual ( for me who’s always cold ) sweater weather , thank goodness I hate the cold
During the cold I’d picked up a pkg of 15 bean soup in the grocery store and decided to cook it yesterday in the crockpot
I made a pan of cornbread to have with it
I followed the pkg instructions except I added two cans of rotel which I pulsed through the mini chopper to purée because I don’t like chunks of tomato’s in soup ( I know it’s weird )
It was good we’ll have leftovers at some point this weekend

Have a great weekend everyone

Re: Whats cooking in january?

Good morning everyone. Cloudy and cold out. Yestauday for lunch I ate the Last of the potatoes and strings beans and for dinner we had leftover roast dinner and clementines and grapes. Pop tarts for breakfast because I have another cold and I wanted something quick and easy. Have a great day everyone.

Well, the fireplace guy came to measure.  Nice guy, he's been doing this for 30 yrs.  The bad news is that there will be some additional costs to the fireplace makeover - guessing a ballpark of $1500. 😠 First, the gas pipe needs to be shortened, which the installer isn't allowed to do.  It sounds weird but we need a plumber to do that.  He's coming Monday to look at it and will likely do the job then.  It's common, easy, and quick.  We also need to find a chimney sweep and get that done before installation.  Then, the most expensive part, we will need what they call a shroud added on the front of the fireplace.  It never fails.  You think something is going to be simple and it ends up getting complicated and more expensive. 🤷‍♀️

At some point, within the next year or so, we are going to replace carpet and paint.  We need it bad, hate the current carpet, but don't look forward to the process.

Lunch today -

Grassfed NY Strip Steak w/Kerrygold Butter

Assorted Roasted Veggies w/a little Marinara, Mozzarella, and Parmesan
