Re: Whats cooking in january?

Tonight we're having caprese panini... tomato, mozzarella, basil on ciabatta rolls. I don't have ciabatta rolls, so now I have to decide if I'm going to buy them or just make some.

Re: Whats cooking in january?

Good morning.  It's sunny and on the warm side.  The next several days will be in the 40's*, maybe 50* on Sunday.  Tomorrow and Friday we stand a good chance of getting some rain.  In spite of some of the super cold days, we haven't had much of a true winter.  Practically no snow and now it's melted.

Yesterday's lunch really filled me up. DH enjoyed it. He's having the same thing.  I'm sticking to the basics - bacon, fried eggs, half an avocado with EBS, roasted Brussels sprouts, a couple slices of an heirloom tomato. Later on, we're going to the UPS Store and Aldi

Have a nice day everyone.

[ Edited ]

Soup and salads for us tonight.  Ham and bean soup and side salads. Going near 38 today.  I will take it after last weeks single digit highs.

@2sisters  I hope your hubby is doing better.  My BIL has been really sick for a week.  Going back to the drs tomorrow, his PCP office is closed today. Meds, etc, he isn't shaking it off.  They said to come back if he wasn't feeling better in 7 days.  They ruled out Covid, RSV and the flu last week.

Re: Whats cooking in january?

I made DH the last of the beef stew and my stomach is in a mood so I had some plain yogurt with fresh blueberries.   I need to try the pizza with pita bread.  @wagirl I buy frozen pizza doughballs at meijer and they are pretty good.  Weather has been nice here.  We live in the middle of a cul de sac and still have a big pile of snow at the end of the driveway that is slowly melting.  Hopefully with rain we are expecting tomorrow it will go down more.

@MOMMAVik  and @lynnie61  thank you for asking.  DH has good and bad days but overall he's doing ok.  Next week he has appointments with his cardiologist and pulmonary Dr with a couple of scans so vacation time will be busy.  He doesn't drive anymore but I'm glad to be with him as he doesn't always tell his drs how he's doing.
@lynnie61  I hope your BIL feels better.  There are so many respiratory and stomach viruses going around.  When DH was in the ER a couple of weeks ago they were so busy.  I hope I don't jinx myself but thankfully I have stayed healthy.  Let me know what his Dr says tomorrow 🙏

Have a good evening everyone!

Re: Whats cooking in january?

Good morning!

The fireplace guy is coming this morning to take measurements, see what he needs to replace the gas pipe, and locate the electrical.  Hopefully we'll get a good installation date so we'll be able to use it some before rhe seasons change.

DS and the kids will be here later on.  I'm using the leftover ham that I diced up.

Lunch:

Ham Broccoli & Cheese Casserole

Green Beans

Fresh Mixed Berries

Keto Cornbread Muffins (DGD's request)

Re: Whats cooking in january?

Don't try this at home!

Last week I came upon a recipe for ground beef with gravy. I thought it was simple and inexpensive, so why not give it a try.  I made it last night.  We each ate most of what was on our plates and agreed that we'd never have it again, lol.  That happens sometimes...

Uh-oh, @house_cat.  I think we've all been there. What didn't you like about it?
