Re: Whats cooking in january?

DD and I have been craving lasagna lately but I just hate to make it  with the  many ingredients it takes and the HUGE disaster my kitchen ---which is an 7 x 8 ft spaceWoman Sad becomes---but I made a kind of  lazy lasagna using filled ravioli and red sauce, and cheeses layered--even added some leftover ground beef. OMG--it was amazing and may I say--even better tasting than the orignal way. And only 4 ingredients too--my kind of recipe!!

Re: Whats cooking in january?

Sub sandwiches with oven french fries. I have some apples to use up so I'll make an apple crisp for dessert.

This weekend we had two new toilets installed & some new faucets put in the kitchen sink & 3 bathroom sinks. One shower had developed a leaky faucet so that got fixed. Whew! A bit of a mess to clean up but now all bathrooms are sparkling clean!

Fortunately DH's friend does this line of work. Only payment he would accept was a rib dinner at his favorite restaurant here.

Have a good evening. We are under a high wind warning & it sure is windy!

Re: Whats cooking in january?

I'm making homemade pizza and garden salads for us.

@wagirl  I like your lasagna.  Your right it makes a mess the other way.  When I make it I share with my kids because it's DH's least favorite but I love it!

@MOMMAVik  How nice to have new toilets and new facets!  Be safe in the wind.

The sun has been out all day and mentally that helps me.
Have a good night everyone!

Re: Whats cooking in january?

Good morning everyone. Wagirl that sounds delicious. And I get what you mean about the mess from cooking a big meal like what. Rachel ray has done  a lasagna with ravioli to make an easyier lasagna years ago. Really windy out with temps in the 30s. Yestauday for lunch I had some leftover potato and string bean salad and I made chicken quesadillas for dinner with tomatoes, Mexican cheese, and sliced black olives it was delicious  and this morning I had cinnamon life cereal. I'm getting a bjs  delivery coming this morning and I'm making  pot roast with potatoes carrots and onions. I'm going it in my new Dutch oven.I wanted it to go from stove top to oven. Have a great day everyone.

Last night I made flatbread pizza with the flatbread I bought at Aldi.  I usually make my own pizza dough, with varying results.  These flatbreads made it so easy and they were delicious.

Tonight we're having sandwiches with leftover potroast and potato pancakes made with leftover mashed potatoes.

@house_cat if you shop at Aldi their actual pizza dough is really good.  Sometimes they're frozen, sometimes not.Ours doesn't always have it, when they do we usually buy 3 for the freezer if they are still frozen in the case.

Re: Whats cooking in january?

Good morning -

@wagirl  - that’s a great hack for a spin on lasagna. I used to do something similar years ago.  Tortellini works too.

@MOMMAVik - what a nice guy.  Do you ever make ribs at home?  We enjoy ribs but never order them out.  We like mine better.  I make them a few times a year.  I think I have some in the freezer, will have to check.  DS likes them so I’ll plan to make them on a day he’ll be here.

Breaking my fast at lunchtime.  We're having some random charcuterie stuff, a couple of hard cooked eggs, and half sn avocado w/everything bagel seasoning.  I'm thinking about making a creamy buffalo dipping sauce for the eggs.

Re: Whats cooking in january?

@JeanLouiseFinch --Yes---I have used tortellini too but I like the ravioli much better. Not a fan of the torts--too much pasta and not enough filling for me. DD and I have been using the Rana brand and the chicken and garlic is our fave but love the mushroom one too--doesn't that sound good in this dish!!
