Re: Whats cooking in january?

[ Edited ]

DS, maybe DDIL, and the kids are supposed to come today, but I'm waiting for confirmation.  We heard from DDIL this morning that our DGD was complaining of tooth pain off and on yesterday.  She was up a lot during the night and has some swelling.  Their regular dentist wasn't available but they found an alternate who could see her. I have a ham to bake and will make some side veggies and keto corn bread muffins if they still come.  If they don't, DH and I will go to Plan B and I'll save the ham for another day.

ETA - they're all coming.  Cornbread muffins are in the oven, almost done.  Then I'll get the ham ready and put it in to heat through.  It's a Master Carver ham from Costco, so already cooked.

Re: Whats cooking in january?

Good morning!

The ham was a hit!  If you've never tried one, the Kirkland Master Carver hams can't be beat, and it's all edible, very little waste. There was a nice amount of drippings in the pan so I made a quick ham gravy. DDIL and I were the only ones who ate it.   Our little grandson kept chowing down and our granddaughter ate really good too.  She likes dipping her ham in Sugar Free Sweet Baby Ray's barbecue sauce.  There was ham left so DS took a little home, to make himself  ham and eggs, and I still had enough to dice up for a casserole this week.

Today we're going to our older grandson's hockey game and then most of the family is  going to meet at a pizza place afterwards.  Two family members are working so they will miss out.  The pizza place has some specialty sandwiches, wings with assorted sauce options, and specialty salads too, not just pizza.  I'm probably going to ordered a Caesar side salad and a bunless Italian Beef.

I made a loaf of Italian bread to take down to Anna's for dinner. She made mashed potatoes, battered chicken, battered fennal,  string beans and potato salad, corn,  grapes, clementines. Everything was good. Leftovers tonight. Sunny and 40 today. Have a  great dinner

Re: Whats cooking in january?

I worked today and did a beef stew in the crockpot with corn muffins.  Last week at the store I saw Pillsbury has corn muffins in a can.  They were actually pretty good.  I made them in muffin pans.
Thankfully the temps aren't as frigid.  Both of my boys works outside for their jobs so I worry so much when it's frigid.

@house_cat  you post pictures all you want.  That bread looks so good. And I love that cast iron skillet.
@Pooky1  I'm glad you got your fridge early!   Your post gave me a smile about using the blower on your snow.  Last week my daughter sent me a picture of my son in law using his on their driveway.

I work this week then next Sunday start vacation.  Mentally and physically I am so ready!

Have a good night everyone!

Good morning!

We had a nice afternoon and evening.  We lost the hockey game, though.  Those poor kids, they had to have been exhausted.  They didn't play well, and it showed,  They played late on Saturday night, three hours away from home, didn't get home until after midnight.  Then a little decompression time before actually getting in bed.  Then yesterday being up and ready to hit the ice a little after noon.  DGS did get a goal, though. 🏒 🥅

Dinner out was good.  Our little granddaughter loves her auntie so it was cute watching them together.  DH brought home leftovers which he will eat today.  I'm fasting.
