Re: Whats cooking in january?

I made a big pot of chili today and also made some banana bread.  It's still so cold here as well and tomorrow will seem like a heatwave at 26!  At least we haven't had snow, crazy as it sounds I would rather have cold than digging thru and driving in snow.

@MOMMAVik  I will try the cranberry chicken!

@Pooky1  enjoy your new fridge!

Thank you everyone for your thoughts. @RedTop I too have learned to be aware of DH's breathing and his O2 levels.  He has had two hospitalizations from COPD exacerbations since September so that naturally concerns me.  He has heart issues which his cardiologist confirmed last week his arortic aneurysm has increased in size since last year. It's a lot for me sometimes but again my faith and family keeps me going. Thank you for sharing about your husband.

Enjoy your evening everyone and stay warm!

Thank you all for the kind souls each of you are!

Re: Whats cooking in january?

We finished up our chili. Spooned over baked potatoes & topped with shredded cheese, chopped onions, crushed Fritos & a dab of sour cream.

These cold days call for great hot meals & I love seeing them here! Stay warm & safe from the snow & ice. I feel sorry for those who are not used to snow & ice. 😥

Re: Whats cooking in january?

Good morning everyone. Still super cold out. It's 815 and just 10 degrees. Considering how cold as it been we did get some melting yestauday. So around my wife's car is all ice so when I took the dog out last night I put ice melt around her car. Had a bowl of cereal for lunch yesterday because the chicken cutlet I was going to make a sandwich was warm so I threw it out. Had tacos last night, with mandarins and some cinnamon bread. I just finished cinnamon bread for breakfast this morning. Ria texted me yesterday morning to see if I could call appliance store to see if we could get fridge delivered sooner. I know fridge was in Boston . they called me back yesterday afternoon and told me he jumped through hoopes but has fridge coming down here today and there going to deliver it tomorrow. Small appliance places are so worth it. Much better service than big box stores.have a great day everyone.

We’re having a heat wave, a tropical heat wave…LOL.  Yes, it’s warmed up to 24* and we’re getting a little light snow this morning.  It won’t amount to much, though.

Would you believe, I went to leave for my massage appointment yesterday morning and my car was deader than a door nail.  Neither DH or I noticed any doors ajar or lights left on.  The last time we went anywhere was to church on Sunday. The car is always kept in the garage, but it did get pretty cold in there the last few days.  It's a head scratcher.  We should have taken the proactive approach and start the car a couple times each day durning the deep cold, but that would have been the smart thing to do.  We have roadside assistance with our car insurance so a guy came over to jump the car.  Unfortunately I had to cancel the massage and reschedule it for tomorrow.

DH and I went to the fireplace business yesterday afternoon.  The person in charge, who we need to speak to, is out sick.  His assistant took down our info and we will get a call back within the next couple of days, to set the appointment for measuring.  When we were there over the weekend, the guy that helped us was a floating employee who gave an inaccurate quote, listing a $649 manufacturer discount.  The guy we talked with yesterday told us about it being incorrect but said they would honor the quote anyway.  I thought that was pretty nice.

DS and the kiddos will be here later this afternoon.  I’m making salmon with lemon dill cream sauce and asparagus for the adults.  I have a couple of options for the kids so they can decide when they get here.

Making tortellini soup today.  Very easy, fast meal.  We will probably have grilled cheese with it.  Made some jello.  Sometimes it's simple, yet good.

Warming up for the weekend.  Going to hit 32!

@Pooky1   You and Anna make a lot of good food!  I hope Ria is doing ok.  I hope your new fridge is great.

Good morning all.  I had stinky night, woke up around 1:30 AM and couldn't fall back asleep.  I hope I don't doze off on the massage table. LOL, it wouldn't be the first time.  I'm sure a nap will be in order this afternoon.

On our Costco trip the other night, I picked up a package of ribeye steaks.  I've had "ribeye on the brain" for a couple of weeks and kept checking the website for a sale on a bulk package.  Since it hasn't happened, I bought a tray of four at the warehouse. They are huge!  I vacuum sealed them individually and froze them.  I weighed each one and they averaged 20-22 oz. a piece!  DH and I always share a steak. We decided to have one of the ribeyes today.  A 10 oz. serving is a lot for me, but I will make an exception. 🫣  Roasted Brussels sprouts will be our veg. and I'll have a small amount of fresh berries.

Re: Whats cooking in january?

Good morning everyone. Not as cold as its been but still cold. 27 out now.better than all most Zero out. Ria use to do alot of meals but due to her crazy work schedule I took over cooking. She is the one that plans meals but we do talk about what we want while shes planning menus. She's still feel crappy. Last night leftover turkey meatloaf dinner , mandarins and some toasted hazelnut honey bread I made yestauday afternoon and I gave Anna a big peice. Anna and I spent 3 hours down cellar with 2 hair dryers thawing out frozen pipes but it worked so its all set. Fridge is coming this morning .they let me know I'm the second delivery. And they will call me like a half hour before they come. It ended up being a little more money but they told me don't worry about  it. I had a piece of toasted bread with butter for breakfast.I will unload fridge when they tell me there on there way. Tonight the last of the turkey meatloaf dinner. Havena great day everyone.

Re: Whats cooking in january?

This week I made a chicken/broccoli stir fry that turned out to be delicious. We ate it two days in a row.

Tonight I'm making burgers and air-fryer "fast food fries".  We used to have burgers most Saturday nights, but for one reason or another we haven't had them since before the holidays. I'm looking forward to it, and since the temps are going to creep up above freezing, I'll be able to cook them on the back porch with my electric grill.  My home smoke alarms are very sensitive and when I try to cook anything like that in the house, all h--- breaks loose.

I've been doing a lot of bread baking since I bought myself a grain mill and I'm finally having success.  Last week I made a sourdough boule with fresh milled flour and yesterday I made sandwich bread.  Very yummy and supposedly quite healthy.

I hope no one objects to me posting frequent photos. I take photos so I can refer to them when I'm menu planning and it's easy to share here.
