Tonight's the night...

 

*Grilled chicken breast with melted mozzarella and topped with pesto sauce

*Romaine "wedge" salad with bleu cheese dressing, bleu cheese crumbles, bacon crumbles, and a few grape tomato halves

*Roasted brussel sprouts

It's hot here and light menu is usually what we eat.  

 my friend went to farmers market and they had great price on green bell peppers -- she bought a small bushel & shared.

 

I made

  • italian pepper & tomato salad,
  • pepper, egg & cheese on hoagie roll
  • pepper & potato frittata
  • omelettes

  •  today I still had 6 left so made stuffed peppers to freeze when I'm in the mood for "comfort" food🙂🙂.

I have an awesome strawberry rhubarb coffee cake that's delicious. I will type the recipe for you tomorrow.

Holy smoke, last night's dinner was fantastic.  We enjoyed it so much I'm making it again Wednesday!

Tonight's dinner:


Grilled sirloiin steak with melted bleu cheese

Sauteed mushrooms 

Eggplant fries (first time making them)

 

Dessert: some macadamia nuts and a few Baked Believe SF white chocolate chips

Roasted Asparagus 

 

Now I'm snacking on some Unsweetened Dried Coconut Strips.

I had totally planned to do a repeat of the pesto chicken breasts and wedge salad tonight, but I'm putting that off until tomorrow.  

I ordered a Dash bowl maker last week and it arrived late Monday. I'm excited about trying it out this evening. I'm going to make Taco Chaffle Bowls filled with shredded lettuce, seasoned taco meat, and garnished with guacamole, a dollop of sour cream, and a little diced heirloom tomato. I'll make some roasted or air fried Buffalo cauliflower bites to go with it.

Pork BBQ with sliced vidalia onions and yellow tomatoes, last of the potato salad, and baked beans.
