What to do with all the MINT?

My garden has a enormous supply of mint and I need some fresh ideas for what to do with it all. I love to can, freeze, and preserve in addition to utilize items in recipes. There's only so much mint I can add to tea and water...and it doesn't seem to be making a dent in the supply. We have regular mint, peppermint, and chocolate mint plants. Thanks!
