Even though it was 90 (or close to it) w/ hiigh humidity all weekend long. I made a pot of beef stew.

I don't save any recipes for certain seasons--I cook whatever, whenever---got a new Instant Pot so have been making soups, chilis, pot roasts.

When we finally have a day of 65 degrees or cooler I will make Turkey Chili, Pumpkin Bread and Cranberry/Orange muffins. (heat index today and most of this week is at 100degrees+)

Tomato soup and grilled cheese. But I will have to do it alone. Hubby does not like the grilled cheese. Poor boy, he does not know what he is missing.

Well, I don't wait for it to turn cool! I crank up that A/C about an hour before I get the pots and pans going. Chicken Pastry (some say chicken and dumplings) I had last week. I've also had a good old pot roast that was so good. The weather doesn't stop me from cooking stuff I love. I live in NC and it gets pretty hot here. Even in December when a lot of you are having snow I have the A/C running while I prepare my Holiday meals.

Now I want beef stew in my instant pot with garlic bread for the gravy. I do eat mayo with my potatoes and carrots though, so that is on the side for dipping. I did a roast last week so I think I'll cut up the chuck and make beef stew and maybe do mashed potatoes. But mashed or chunked, I'll eat them all the same.
