Both release moisture and gas that cause deterioration and rot of the vegetable. My guess is that your "spongy" potatoes are a result of being stored near another gas producing fruit or vegetable.

@house_cat, the gases from the onions encourage potatoes to sprout.

If your potatoes start sprouting, just remove the sprout with your fingers and the potatoes will be okay. If you don't remove the sprout, the sprout will use the potato as food and it will become mushy.
To grow potatoes in your garden, you just cut up a potato and bury the pieces with skin attached in the soil. Those sprouts will grow more potatoes.

Thank you. I did not know that about onions and I have been storing them together. I certainly will stop doing that!
I made some delicious roasted garlic and caramelized onion mashed potatoes today and I'm freezing them like this. When they are solid I will remove them from the pan and vacuum seal them. There are eight extra large muffin cups loaded above the top! Yum!
