I had to go to Costco this afternoon to pick up a Rx at the pharmacy, so I got one of their huge pumpkin pies while I was there.  It was pretty busy, but was surpised at how fast I was in & out considering it's the day before Thanksgiving!  I guess I hit it at the right time.

Chocolate pie, poundcake with fruit.  I made Squash pies yesterday. One for us, one for my LONG time neighbours/ second family.  Delivered with whipped cream naturally!

@Sooner  Here's the recipe for Mary Beth Roe's Impossible Pumpkin Pie:

 

1/2 cup baking mix (Bisquick)

4 eggs

15 ounce can pumpkin

1/2 tsp. ground cinnamon (I use 1 tsp.)

1 tsp. ground ginger

1 tsp. ground nutmeg (I use 1/2 tsp.)

2 cups milk

3/4 cup sugar (I use 1 cup)

I also add 1/8 tsp. each of ground cloves and freshly ground pepper and 1/2 tsp. salt.

 

Preheat oven to 350.

Combine all ingredients in a blender and blend on high for 3 minutes. 
Pour into a greased and floured pie pan.

Bake 1 hour. Pie is done when a knife inserted into the center comes out clean.

Cool and refrigerate.

Serve with whipped cream.

I had a piece of my pumpkin pie for breakfast, you know, for quality control.  It passed the test.  Smiley Happy

 

I usually do that because, at the end of everything and after eating the dinner, there is no way I have room for pie anyway.     I can usually only eat a very small amount.  The next day I have my little leftover dinner and enjoy it more because I'm not so tired.
