DH and Kingston are off a geocaching/camping trip, so it's just me for a couple of days.

 

I have 2 lbs. of fresh shrimp in the fridge, so I'm thinkin' I'll start with bacon wrapped shrimp, sweet & sour sauce and others for dipping....YUMMMMM!

 

I'll decide later what to do with any fresh shrimp left, if there is any, LOL!

 

But right now, I'm thinkin' shrimp egg rolls or spring rolls later.

@KingstonsMom Martha Stewart's Sweet and Sour Shrimp is excellent.  We are having pasta for dinner.  enjoy your weekend.

Ingredients
Ingredient Checklist
  • 1 pound peeled, deveined large shrimp
  • Kosher salt and freshly ground pepper
  • 3 tablespoons vegetable oil
  • 1 small bell pepper, ribs and seeds removed, cut into thin slices (1 1/4 cups)
  • 1 tablespoon minced garlic (from 2 to 3 cloves)
  • 1 tablespoon minced fresh ginger (from a 1-inch piece)
  • 1 cup peeled, chopped fresh pineapple
  • 3 scallions, cut into 1-inch pieces (1 cup)
  • 2/3 cup apricot jam or orange marmalade
  • 3 tablespoons distilled white vinegar, plus more for serving
  • Cooked white rice, for serving

  • Step 1

    Season shrimp with salt and pepper. Heat a large, heavy skillet (preferably cast iron) over high; swirl in 2 tablespoons oil. Add shrimp and cook, stirring occasionally, until opaque, 1 to 2 minutes; transfer to a plate. Add remaining 1 tablespoon oil and bell pepper to skillet; cook, stirring, until pepper has softened, about 3 minutes. Add garlic, ginger, pineapple, and scallions; cook 1 minute.

  • Step 2

    Stir jam and vinegar into skillet; bring to a boil and cook until reduced and syrupy, about 1 minute. Return shrimp to pan and toss until coated and heated through, about 1 minute. Season to taste; serve over rice, sprinkled with more vinegar and pepper.

I just bought a 2 lb bag of shrimp.  Last night I had some.  1 lb shrimp, 1 tea italian seasoning, 1/2 tsp salt, 1/2 tea crushed red pepper; saute in butter or olive oil.  Yummy.

Today I'm thinking scampi.

I prepared tuna salad yesterday, so the flavors could "marry" for today's lunch, and or dinner. I use finely chopped red, and green onion, diced dill pickle, two chopped boiled eggs for texture, sea salt, and fresh cracked black pepper. Celery seed to taste, is substituted for fresh celery because I detest raw celery in anything but avocado toast.😁

 

I sometimes make a compound butter with softened Kerrygold butter, fresh cracked black pepper, a pinch of celery seeds, and use it to toast the bread on one side.😋

I have a bit of leftover potato soup in the fridge for lunch.  Took hamburger out of the freezer...think I will make spaghetti for dinner.  Cold and pouring rain here....bring on the carbs lol!

I'd use hubby's absence as an excuse not to cook or have to clean up and get some take out.

every year, we still celebrate my deceased MIL's birthday. she loved korean food, so we're having beef bulgogi and spicy chicken bulgogi today.

Dinner will be marinated chicken breasts done in the Ninja grill and a couple of veggies.

 

Lunch, well, it was brunch at 10:30 this am.  There was leftover Chinese calling my name.  Shrimp lo mein, sesame chicken and shrimp fried rice.  A little of each hit the spot.
