Late breakfast of bacon, eggs, and melon. Going to be hot and humid so will stay inside today. Going out this evening with friends. Lunch will be leftovers so I'm done cooking for the day.

 

Sure hope everyone is well and good. Would love to hear from any and everyone. Please post here. We love company.

White Cheese Dip

Hot and cheesy and totally addictive - this White Cheese Dip is the perfect addition to any pizza night at home!
Serves: 10 servings
Ingredients
  • 8 oz cream cheese, softened
  • 8 oz Mozzarella cheese, shredded
  • 8 oz Monterey Jack cheese, shredded
  • 2 oz Parmesan cheese, shredded
  • ½ cup lightly packed basil, chopped, plus more for garnish
  • 1 tablespoon fresh thyme, chopped
  • assorted crackers, for serving
 
Instructions
  1. Preheat the oven to 400ºF. Spray a 9-inch deep dish pie dish with nonstick cooking spray.
  2. In a large bowl, combine the cream cheese, Mozzarella, Monterey Jack, Parmesan, basil and thyme. Mix well. (You may need to use a metal spoon to stir it all together - the mixture will be quite stiff.) Spread evenly into the prepared pie dish.
  3. Bake in the preheated oven until warmed through and melted and bubbly around the edges, 25-30 minutes. Serve hot with crackers.

This has happened a couple times - not with this thread but once was the Birds Nest, I remember that. So not really sure but just DO NOT LIKE THESE CHANGES.

 

Having said that, WE HAD RAIN TODAY. Not sure how much help it was as we are so dry out here but am grateful. And it was cool - actually had my sweater on this afternoon. Tomorrow - suppose to be almost 00 - anyone want to try and figure this all out.

 

Fires still going but am hoping the rain has helped calm them down.

 

Did NOT fix dinner. Have a ton of stuff in the Fridge and we went out to a cheap place. Tessa acted up - as is often the case lately - and there went my appetite. She has been doing so well but she is super disrespectful with me and her brother and Mom aid and abet. Ahhhh, to live alone - I think it is getting closer.

Soushi i I hope you and Nelson are in a safe place. We are under a tornado watch until midnight. Have had rain off and on and wind. We were in the 90s today and supposed to be there tomorrow too
I'm happy you got some rain, Freddie. Maybe it will just keep it up. We are so saturated here with flash flood warnings. My family is scattered all over tonight with the youngest clear up in Michigan. I want them all back in one nest.
Sorry your dinner was not pleasant, Freddie. Hope Tessa will calm down and peace will reign once again

Yock, we were out to dinner with friends in North Webster. It is about 1/2 north of here. We didn't see any of the storm but it did hit Warsaw. Saw pictures and video of the storm hitting here. It ruined the last night of the the fair.

 

Yes, too much rain here. Nelson found mold on carpet and outside wall in basement. I was just sick! Not sure where or how to clean this up. Maybe just wait till this continual rain stops for awhile. More rain coming this week.

 

But we did see the most beautiful DOUBLE rainbow in the sky coming home!!!

 

Made a recipe that was on these boards this morning and it was good. Hamburger, cream cheese, 1/2 and 1/2. Cook and pour over fried eggs.

 

Not sure what the day will bring. No plans yet.

We had rest of local sweet corn, warmed up the last of the green beans, fried leftover baked potato, and reheated fish from Saturday night. Yes, all leftovers but all still good.

 

Need to think about dinner as I'll need to take something out of the freezer.

Soushi, I usually really like left overs - makes me feel like I am not   wasteful. Also in many cases reheating makes the food taste better.

 

Weird dinners here tonight. I wasn't hungry so fixed myself a cheese sandwich, just mayo and lettuce as a go with - I was happy with it. Tessa had my last Veggie Bird Nest - need to get some more from TJs. She also had some mac and cheese - what a combo. Davey had a cheese pizza, courtesy of the microwave.

 

Had to turn my AC on about 6 or so - first time in three days. After a lot of rain this weekend, nothing today, and was not happy about that. Horribly humid and HOT as the sun finally came out. Thought I was back in New Orleans. LOL.
