Re: What's cooking this January?

Tonight we had chicken and wild rice soup and toasted cheese sandwiches

It’s cold here this weekend but it’s going to be warmer again next week thank goodness I don’t like the cold
I’d love to have some snow to play in for a day or two but I’d get tired of it after a couple days I’m sure
I hope everyone stays safe and has a nice weekend

Re: What's cooking this January?

Sub sandwiches & vegetable soup. Pear crisp & vanilla ice cream.

Needing some groceries, fresh produce, milk, yogurt. So cold to go out, may send DH with a very d detailed list. I chuckle when I see a man taking a picture of an item on the grocery shelf & sending it to the wife or someone else, possibly for the o.k.!

Stay warm & indoors if you can. Have a good evening.

Re: What's cooking this January?

It is very cold today with wind chills in the single digits but I think I am going to venture out this afternoon to get my monthly pedicure.  Well see I have a 1:00 appointment scheduled.  Later I am making meatloaf for dinner and spending the evening watching football.

Last night I divvied up the Mississippi Mud Roast and vaccum packed all but two servings for us to have for lunch today or Monday.  This morning I seasoned the pork loin with my homemade dry rub and got it going in the slow cooker a few minutes ago.  This afternoon I'll make a meatloaf with the ground beef I thawed.

I talked with our son who lives in the snow band. Areas of his town got 32" of snow yesterday.  He made it to work in the morning but since roads hadn't been plowed by the afternoon, he walked home and got his driveway, sidewalk, and the neighboring houses cleared.  Then he walked back to work to retrieve his car.  He said the roads were bad and he almost got stuck, but he made it home OK. He's supposed to be off today, but is on standby.  I'm sure he got called in.

DH and I are going out this morning for a couple of errands. I have lots of grocery shopping to do so we'll tackle two stores today and two stores tomorrow.  I'm not sure if we'll stop somewhere for a bite or if I'll make something when we get back.

Vegetable barley soup made with leftover pork roast and cheese biscuits (mix) for us.

My phone says it is 6 degrees here in southern WV.  I switched over to the EmHeat feature on our heat pump this morning, so every time the heat comes on, I envision our electric meter spinning around rapidly, and another $400 electric bill this month!  But I'm also trying to think about the way I stock my house in the fall, helps me make one grocery run a month in January, February, and March, which saves at least $300 a month, so I'm still saving money.

Trucker daughter is dealing with extreme cold too; 2 degrees when she woke up this morning.

Re: What's cooking this January?

Leftover chili for us. I made a couple of baked potatoes in the air fryer for them.
Everyone is having some good meals!

@JeanLouiseFinch  I bet your house smells delicious.  I can't imagine getting that much snow.
@RedTop  we've had our emergency heat on since last week so I know our bill will be high. We keep the thermostat at 70 and it's still cold in the house.

@MOMMAVik DH rarely goes to the store but if he does I send pictures to him of what I want him to get Lol

Have a good night everyone!

Re: What's cooking this January?

Thank you @house_cat for the Marry Me Chicken recipe. I have added some of those ingredients to my grocery list. This will definitely be one of our dinners next week! Also planning goulash (several great recipes posted on Forums recently) for next week too. This cold, snowy weather calls for these warming meals.

@2sisters, LOL, the pictures can save another trip back to the store! Hope you are feeling better.

@RedTop, I hope your trucker daughter doesn't have to navigate snowy or icy roads. Staying warm is a challenge here too. We have thermostat set to 72 & I'm still cold. Bundled up in sweats!

Re: What's cooking this January?

Tonight dinner will be sloppy joes, oven fries and salad. I have leftover pear crisp for a bit of dessert. If it warms up a bit tomorrow we will venture out to the grocery.

Packer game tonight so DH will still look for snacks. Popcorn should do it & maybe chips & salsa.

Have a nice evening all!

Re: What's cooking this January?

@MOMMAVik  thank you!  I have Naproxen I take when the inflammation gets to be too much and it helps.
That pear crisp sounds yummy!
