I've been up and down all night, obvious had too much water last evening.  I'm trying to drink a little more than usual and it has to go somewhere .  🤷‍♀️

We are experiencing freezing rain today and everything is covered with a coating of ice. The roads are like an ice skating rink. Fortunately we have no appointments or need to be anywhere so we'll stay inside.  I already started a fire in our fireplace.

Lunch -

Mississippi Mud Roast

Creamy Mashed Cauliflower w/Kerrygold Butter

Steamed Green Beans

Chia Pudding w/Fresh Raspberries

Re: What's cooking this January?

Baking my honey oatmeal bread this morning and will probably work on my turkey burger leftovers from yesterday. I think I might bust out the herb goat cheese to pair with them today.

Have a great day all!

Re: What's cooking this January?

I was planning to make @Zhills American goulash tonight, but since I'm going to be out all afternoon I decided to move it to tomorrow night.  We're expecting lots and lots of rain the next few days, so the goulash will be a good comforting dinner.  Tonight we'll have meatball hoagies and salad.

Re: What's cooking this January?

DH will be out of the house at dinner time tonight, tomorrow and Thursday so DD and myself will be on our own.  DD just received a grocery order last night so she has things to cook for herself.  Even though I don't have to I am still eating a soft diet because the roof of my mouth where they took the gum graft is still quite sore.  So I plan to have mac and cheese and soup over the next couple of nights. Friday night we are going out to dinner and I plan to have something chewy- Beef Wellington.  I should be fine to eat that as long as I don't have to bite with my front teeth which I am not allowed to do yet.

Re: What's cooking this January?

Good morning everyone. I broke my kindle that's why I haven't been but I got a new one. Expecting some snow tonight and the next 4 days will be rain after we get some snow. Yesterday for breakfast I made myself oatmeal and for lunch I had my mil leftover chicken with cauliflower and for dinner I made chicken , stuffing and broccoli casserole and to go with it I made a batch of pretzels. And tonight's dinner will be be breakfast .scrambled eggs, bacon, hash browns and we will probably split  a bagel. I have puff pastry out thawing to make cherry and apple turnovers. Have a great day everyone.

Re: What's cooking this January?

I made cheese coneys for us tonight and we ate the last of the cole slaw.
Thankfully we only got rain last night and it's rained most of the day. Temps stayed around 33-34 so no ice.
Have a good evening all!
