What's cooking this January?

  • Good evening everyone and happy New Years Eve and have a have new years day everyone. I'm starting the year early. For breakfast I made a pan of Pillsbury cinnamon rolls and Anna made pasta with meatballs, string bean and potato salad, broccoli, salad, chicken parmesan, mashed potatoes and probably more. Tonight we just had nachos with cooked chicken, olives, chick peas and Ria made a cheddar cheese sauce. Really good. Ria took all Christmas decorations down and I took them all down cellar and I took up 2 bins of Valentine's decorations and the 6 foot pink tree. Ria has 3 days off so she's getting Alot done. Ave a great new years everyone.

Today we had the soup that I made with the last of the holiday ham and crusty rolls. For tomorrow I made sauce with meatballs and mushrooms for spaghetti. šŸ

Tonight I made black bean soup with a smoked ham hock. Tomorrow will be beef short ribs, mashed potatoes and biscuits. Yeah kinda heavy to start off January but it will be good!

We just returned home from a weekend at my sister's home celebrating with her family.  I really enjoy spending time with my nieces' and nephew's families.  One of my nieces has a little farm and they raise a couple of hogs every year for butchering.  We were gifted with some of their bacon.  It's so good!

I used up just about everything in the fridge before we left except for some cheese, a few slices of salami, a few eggs, some berries, yogurt, etc. We're making do with that for today and will restock tomorrow.

Re: What's cooking this January?

I made a big breakfast today.  Eating some leftovers for dinner.  Need a fresh trip to the grocery store.  I'm mad that I forgot about a huge container of spring mix I just tossed.  I don't like to waste....hoping everyone has a happy and blessed 2024.

We have some sliders and dip and some veggies left over from a small celebration yesterday with family.

Happy New Year to all the foodies here! These menus sound just delicious. Thank you for starting us off so faithfully @Pooky1. Your family has a great jump on Valentine's Day. I love that holiday šŸ’•!

Picked up some salads tonite. We had the Southwest Chicken Salads. Very refreshing and light. Perfect for the New Year & leading into healthier eating here.

Have a nice evening!
