Hi @kate2357, good to "see" you but you are tempting me with your tasty meals!! No doubt Jack & the guys are happy to see you bringing the great food. I so hope that the transition to rehab goes well & helps Jack, you and your loving family heal. Good that you are getting out & cleared that hurdle with the insurance.

DD was here last week & yes, she said Seattle's weather is glorious. She is doing a lot of walking in many different places with her friends. Hopefully you won't get that terrible heat like last summer.

Geez...how do you follow those last posts? Yum!  I have found a Tuna, Pasta Salad that is different and this is the 2nd time I have made it.  Really good.  Will have enough for 3-4 meals!  No more cooking!

Found a recipe for a low sodium smoked brisket and my oldest son is going to give it a go in the morning. I have the brisket ready to go w this new spice rub. Going to be spicier...hopefully it has a good taste. All the ingredients looks good. Also have a summer slaw prepped to go with the brisket and one of my dil is going to make cornbread muffins w/honey glazed top.

 

Ingredients for no salt rub
1/2 cup packed brown sugar
3 tablespoons smoked paprika
1 tablespoon freshly ground black pepper
1 tablespoon granulated garlic
1 tablespoon onion powder
2 teaspoons dry mustard
1 teaspoon cayenne pepper

Yesterday morning I had my dental sutures removed.  I didn't feel like doing my ALDIs trip so I just stopped at the local grocery store for a few things to get us to the weekend and we can shop then.  Normally, I buy romaine lettuce or spring mix for our salad, but the last week or so, I've been craving a wedge salad.  Well the store had a couple of big firm heads of iceberg lettuce for 88 cent a piece.  They also has some nice looking heirloom tomatoes, so I'm in business. 

 

 

Today we're having:

Salmon filet w/ Creamy Lemon Dill Sauce

Roasted Asparagus

Wedge Salad (iceberg lettuce, bleu cheese dressing, bleu cheese crumbles, bacon crumbles, diced tomatoes)

Chia Pudding w/Fresh Blueberries

DH has a fishing club event where he will be fed! So I am making a tuna pasta salad with hot dinner rolls and fruit salad for dessert. My neighbor will join me. The weather is just beautiful so we will dine in the yard.

@kate2357, your seasoning combo sounds tasty. I'd like to try that on grilled chicken or fish.

OOO! @JeanLouiseFinch a wedge salad sounds great.  There is a restuarant that my DH and I used to go a lot before the pandemic that makes a great one.  I just made a reservation for tomorrow night. Yum

I'm having Chili from Wendy's.  It is down right chilly here in NE PA. It went down into the low 40s the last few nights and will tonight as well.  Darn furnace running overnight in June.

 

It's crazy I tell ya.
