Today I made the TikTok viral Spaghetti and my goodness is it good! I added a very basic salad of lettuce, tomatoes, cucumbers-green onions & a mix of Red Western w/ Ranch. I don't mix the dressings together, I just use both. I had a customer request it once and I've never looked back 😂 I took out some garlic French bread but decided against turning the oven on so in the toaster they went. Land-o-lakes garlic & chives mix made the toast even better. 

I've never posted in the recipe groups but I will admit I've tried several recipes from you all. There are some culinary chefs in these forums. Due to medical reasons I sometimes can only have 1 bite of food. I do not waste that single bite for any reason.. I'll also admit that I'm writing most of the recipes I see in a folder. My grandkids laugh at me saying print it gma 😂

Potato soup made with frozen mashed potatoes, boiled one potato, diced, with sweet onion, added mashed potatoes to potato water until right consistantcy and added roasted carrots, broccoli and 1 slice sharp cheese!  Easy and yummy!

Jack does have a solo room at the skilled nursing place. I'm not sure how they decide which patients get solo and which share. Because Jack is solo, it leaves enough room for his brothers to set up cots and spend the night. They help Jack get to bathroom, do exercises, etc.

 

When Jack came out of hospital he was having anxiety attacks and nights were the worst. Not being able to even sit up made him feel particularly vulnerable. I spent a few nights and his brothers have been there every night I wasn't.

 

We are all very cautious to not make a big deal about the food Jack is getting or the fact he has relatives in his room at night. I'm not sure any patient is even aware of what is going on in Jack's room. Staff knows and gave ok. They are probably grateful for help as Jack is 6'5" and most of their staff would find it a challenge to move him about.

 

For Sunday dinner they guys had blackened halibut fish tacos, corn salad and Spanish style rice. 

 

And I do agree  we are very blessed that our family have been so supportive. I have so much respect for all the care givers out there. I've found it physically and mentally draining ... and I have many helpers. So many folks have to go it alone and I am in awe of their strength.

Good morning everyone and we're always like when new people stop by so welcome to the food thread. This week is going to be warmer in the 70s all  weeks with showers possible but sunny allso. Last week I got the pool put up and filled. One for major summer thing off my to do list. I was dying to be able to say garden is planted and pool was up and finished now just maintaining everything. Satauday I had to have a ultrasound on my bladder and kidneys because I have been getting UTI on and off since March. ON the way home we picked Wendy's for lunch and ordered food for dinner .enough for a few meals. Yestauday my mil Anna cooked Pasta for 1 person be cause no one else wanted it. And chicken parmesan, meatballs, chicken and potatoes, broccoli, French fries, not sure what else. For today is homemade sweet potato gnocchi. I have never made any homemade pasta so my wife Maria said she would make it on Sunday. I helped her make it so it wouldn't take her hours.we got almost 4 sheet pans full.half got frozen. I will cook it for dinner with an Alfredo sauce.she has done homemade potato gnocchi, ravioli, fettichinni and that type of pasta.originally she had the crank pasta machine but like 10 years ago I bought her the pasta maker that attachment that goes on the kitchen aid mixer. Much easier. Hope you all have a great week and jack continues to get better. Kate still sending you and your family prayers and well wishes.

I have chili slow cooking. Will serve over rotini pasta with shredded cheese, chopped onions and crushed Fritos. Dessert will be fruit salad: blueberries, strawberries and canteloupe.

Pretty cool here but beautiful sun. Wish it could stay like this!

I had a massage appointment this morning so didn't want to bother thawing something out and then cooking when I got home. I grilled an extra steak yesterday so we could have a big tossed salad with steak for lunch today.  Always tasty and filling.
