We have some things to do this afternoon so I decided to make dinner for lunch.  When we get home, we’ll have something small like a little keto granola and unsweetened almond milk. Our lunch today:

 

Grilled chicken breast 

Spaghetti squash 

Homemade Alfredo sauce

Oven-roasted asparagus

BBQ ribs and macaroni salad for us tonight.   Trucker daughter is home for the weekend.

Making pizza tonight. Don't have any pizza sauce,so will use spaghetti sauce. Also will have a salad with it.

Dinner tonight:

 

pork chops w/keto dry rub and cooked in the Ninja grill

spinach salad 

oven-roasted broccoli and cauliflower, sprinkled with Parmesan cheese

 

 

 

After dinner snack:

 

some macadamia nuts and keto white chocolate chips

Cold, windy & snowy here too! Fresh green salad, lasagna, red grapes (so sweet & only $1.00/lb.!!) & Pepperidge Farm Chessman cookies for dessert. I will be having some hot tea also. Hope all are well!

Tonight’s dinner was...

 

Sirloin steak, made in the Ninja brill

Small garden salad

Brussel sprouts with bacon & garlic

Sweet & sour cucumber salad

Cheddar cheese biscuits 

 

Dessert:

Vanilla cupcake with cream cheese frosting 

 

Who says keto is boring?  Not me...ever!

Today, for lunch, I had:

*Mushroom & mozzarella omelet 

*1/2 an avocado, sprinkled with everything bagel seasoning 

*A few mixed berries

 

Dinner tonight is one of our favorites:

*A large salad with mixed lettuces & greens, cucumbers, mini peppers, kalamata olives, grilled chicken, Walden Farms dressing (raspberry vinaigrette or balsamic vinaigrette)

*Macadamia nuts & Bake Believe white chocolate chips

When my sister came to visit, I made Barbecue Chicken in the crock pot. The sauce called for soy sauce, but I thought that was overpowering. (Good thing she liked it!) But I would definitely hunt for another recipe.

 

The lasagna came out great....but I made 2 huge cassaroles, and today I have to bake off the 2nd one. Our temps are supposed to soar today, and I'm not thrilled with another heavy meal.

We’re having pizza tonight.  When I’d make pizza, I have always used the fathead dough for the crust.  Tonight I’m going to try a homemade cauliflower crust. 🤞
