Good evening everyone. This week Ria made big pan of mini meatball soup and the other meal was chicken piccada with a rice side dish with crushed pineapple Mandarin oranges and the juice from fruits the rice gets cooked in. Both were very good. Yestauday I baked caramel apple cookies with frosting and pumpkin cookies with a cream cheese frosting. Both of those were very good allso. Winifred if you come on here we miss you .have a great night everyone.

My family enjoyed vegetable soup today made with leftover pork and vegetables from our meals earlier this week.   Emptied up 5 containers in the fridge, and made just enough soup for us today.   

 

Our high today in southern WV, was 34 and very breezy.   Visible snow flurries are predicted for tomorrow.

I made steaks a couple nights ago. Tonight we used the leftover meat on a big tossed salad with bleu cheese crumbles and bleu cheese dressing.

*Hard Boiled Egg

*Roasted Brussel Sprouts 

 

Dinner tonight:

*Buffalo Wings

*Roasted Broccoli 

*Celery 

*Bleu Cheese Dressing for dipping

Baking chicken breasts tonight with mashed potatoes and gravy and a salad. Will have plenty of chicken left to make something for tomorrow.

I love a well seasoned, grilled thick boneless pork loin chop.  I have my own dry rub that I use and grill them on my Ninja. That's what we had for dinner tonight (keto friendly bbq sauce in the side), along with sautéed baby spinach.

Cold here. Tonight we had meatballs, spaghetti, garlic bread & green salad. Cherry pie for dessert with vanilla ice cream. Sleep well friends!

Don't laugh, but....

 

I am on a kick with Cleveland Kraut.  I eat a few bites everyday for gut health but DH turns his nose up at it.  The other day, we were at Costco and passed by their beef dinner franks in the refrigerator case.  A lightbulb moment for me.  It's far from gourmet, but tonight we're having:

 

Beef hotdogs

Roasted Broccoli 

A nice pile of kraut!  😋

  1. Good evening everyone. Good sunny day in the 50s. This week we were going to have chicken broccoli Alfredo for a few nights. But I don't care for it leftover. So I told Ria I will cook it fresh the days we're going to have it. She made taco flavored ground beef with chickpeas and she made a cheddar cheese sauce to go over French fries.both were very good. And tonight I made us grilled cheese for Ria and grilled cheese and pepperoni for me. Ria is on a second round of steroids to help her get better.doctor told her as swelling starts to come down from all the trauma from surgery she will start to feel better. She allso gets migraine headaches but the topimax she takes will help headaches get better to as swelling goes down. Ria started decorating for Christmas today. Hope you all have a great week.

Chia Seed Pudding with Fresh Blueberries
