I ate some of my roast as stew. It was really good.

I also like to take a slice of bread or a roll & put the roast on it covered with gravy. YUM!!! DH thinks I'm weird. He thinks I should eat the potatoes & carrots with it each time I eat some of it. I rather eat a salad with it sometimes.

Your right it does get better as it keeps. 

I have a sister that will only eat leftovers the next day. She says after that it's too old to eat. Seriously!!! She's missing out on good pot roast.

I used Vidalia onions too. I have a gallon size bag full of them chopped up in the freezer.

Soup weather is coming.

I was craving good food since I've been on vaca for 2 weeks -- sick of eating out! 

 

I'm making roasted chicken with vegetables, rice & salad.  Can't wait for dinner --it smells so good in my house i'm hungry now.

 

Next I'm making stuffed peppers for tomorrow's dinner...yum! 

 

I thought about pot roast @Nightowlz after reading yours & others may make it on a off golf day!

I eat mine with garlic bread often.  I love the veggies, so I tend to have more meat and gravy left, so I chop it up and put it on the toasted garlic bread for a spin on SOS, chipped beef on toast.

@OKPrincess, thank goodness I'm not the only one who does relatively little cooking (I use the term "cooking" loosely) since retirement! I try to do better in the fall and winter, but not in the summer. DH and I went to our middle school grandson's football game this morning and the sun/heat just left me (and DH) blah for the rest of the day. It's just plain hot and humid here, so cooking is out of the question! I did manage to cut up some cheese and summer sausage! LOL!

Yep my kind of cooking. Well DH and I went with our almost 4 yr old great nephew to a meet and greet party with the ninja turtles this morning. Who can cook after all that excitement? 🙀

 

However I love to collect all colors of Fiesta dishes and Lock and Lock. I’m prepared in the event the urge strikes.
