Re: What's Cooking this November - Thanksgiving Time

What an adorable greeting Preds.

Fixed some black eyed peas last evening. Usually have only that, sliced tomatoes and cornbread. Well I added the remainder of leftovers of the roast and veggies - so now my Fridge is somewhat cleaned out and can start all over in saving food. LOL. I did add some cornbread to the mix also.

Right back to the big question each day - what for dinner tonight? Have no clue but have a lot of things in the freezer and cabinets - will not lack for food for dinner - for sure!!!

Have a great day everyone. Still missing all the regulars who use to stop by - getting real lonesome here.

Re: What's Cooking this November - Thanksgiving Time

[ Edited ]

Last night, I made up anoither pasta dish.  I put large chunks of zuchini along with fresh basil, any herb could be used, a chopped onion, good sized pieces, in a pan with extra virgin olive oil, chicken stock, not too much, and salt and pepper.

I had leftover turkey patty mix from the other night, ground turkey, minced garlic, green onion, and yellow onion, and cilantro along with salt and pepper, so I fried small patties like a medium size meatball only in patty form, and added them to the cooked zucchini along with a can of cannelini beans, and let it sit off the heat until the pasta, Radiatori, good size which I bought at Home Goods though it is in stores, maybe not this size, was cooked.  I added the cooked pasta to the zucchini mix along with more chicken stock.  Once it was all gently mixed, I adds lots of greshly grated Parmesan cheese, more on top once on the plate.

I took a chance and ordered a prime rib roast from here which will arrive soon, so will serve that with cooked new potatoes, then smashed and roasted, with a dollop of sour cream and chives on top, and a vege.

Re: What's Cooking this November - Thanksgiving Time

Mousiegirl, you cannot go wrong with Pasta - I sure love it a zillion ways.

Tonight it was interesting. We had some leftovers from  yesterday as Davey, his Mom and Leach ate out - so to speak - Ricky was with Sherry. LOTS of food left over from that so we dug into that and this morning the little girl and I went to Target and came back and went thru the drive thru for Chili Cheese Fries - they make the best. Way too much for me and the little one was not going to be fed that so more than half left over. All in all everyone ate well tonight except me.  I am hungry but not really - still full from those Chili Cheese Fries. LOL.

Garbage pick up tomorrow so trash containers, et al,l have been emptied. Things moving too slow for this old lady so I struggled to pull the garbage container onto the carport and the recycling container was easy to push. Now to get Davey off his you know what and moving - he is soooooooooo lazy!!! They still must go to the street!!!!!!!!!!

Hope one and all had a great day and of course ate well. I still want to see our regulars come on back here. Boo Hoo!!

@Winifred  The best chili cheese fries I ever ate were at Knotts Berry Farm.  I came home and figured out a close enough recipe by adding ingredients that I thought were in the sauce.Smiley Happy  DD and DH went around on the rides, while I sat on a bench stuffing my face with the fries, lol.

Re: What's Cooking this November - Thanksgiving Time

I noticed I did not put where I got the chili cheese fries - went thru the Farmer Boys drive thru. I tell you me and this new keyboard are sure having problems and I do not notice it a lot until I have already posted it. And I think I am checking before I hit send. Geesh.

Well this morning for sure I AM FREEZING. Brrrr.

Mousiegirl it has been eons since I have been to Knotts Berry Farm and it is only an hour away - a good 25 plus years.

Hope one and all have a good day.

Re: What's Cooking this November - Thanksgiving Time

Ate at Steak 'n Burger last night. I had Fettuccine with garlic bread - it was super good. They prepared it with big slices of carrots and also broccoli - just fantastic. Shannon had a taco salad and Davey a huge burger and fries - what else. The little girl just sat there wiggling. It is difficult to keep her strapped in a hi chair - that little one year old is constant motion. We literally spent a lot of time just making sure she would survive. She was rolling - good as can be but unbelievably active. Whew!
