@Laura14  I don't know if this bread is available in your area, but we always have Dave's Killer Bread, organic 20-21 grains and seeds.  It has such a wonderful flavor that no butter is necessary, it is filling, and healthy.

 

I hope you are eating more than beans. Fish and vegetables are good choices. Smiley Happy For snacks, I eat lightly salted roasted peanuts, filling and gives me energy.  I also eat a lot of blueberries.  I get the organic frozen at Costco.  Yams, I remember your saying you eat them, are a power food.  I ate half of one for breakfast with my morning supplements.  Eggs are good. I saute spinach with two poached eggs, all cooked in extra virgin olive oil. Smiley Happy

 

 

   


 


@mousiegirl  Thank you so much!!  I actually have spinach and I did some scrambled eggs this morning. I may make that spinach and eggs tonight for dinner.   You always have such good recipes.  

 

Unfortunately, I don't like fish or at least I don't think I do.  I remember as a kid not liking it very much.  I don't like the taste of fish.  I can stomach tuna mixed with something every once in a while but I don't think I like anything else.    

 

I am the peanut butter queen too.  I go through a small jar a week.  A few scoops is my dessert every night.  I also found if I grind raw peanuts in the vitamix and then do my banana and almond milk, it makes an excellent soft dessert too.  I accidentally discovered that a few weeks ago.

 

I am not familiar with that bread but I will look for it.  I use Ezekiel bread and I'm okay with Polaner all fruit but it's really sweet now that I've come off sugar so I'm not a huge fan.  I'll have to take a peek at my next visit to the market for what you have.

 

I do have bean tacos for lunch today.  If nothing else, my fiber and protein are off the chart!     


 

@Laura14  I always think that someone who doesn't like fish never ate fresh fish.  Salmon is excellent for health, and delicious.  The trick is to not overcook fish, because then it is inedible.  I know there are some wonderful recipes for salmon on google.  I buy boneless, as who needs the frustration of pulling bones out.  I usually get a tail filet, no bones, and thinner than other cuts, but that is an individual choice.

 

If you like eggplant, or are willing to try it, I salt and pepper thick slices and fry them in extra virgin olive oil.  When they are browned and tender, I lay them on a plate and drizzle over them balsamic vinegar, garlic, fresh herbs, I use oregano and parsley, basil if I have it, and extra virgin olive oil, salt and pepper.  This is so delicious. I agre that beans are an excellent food.  I love beans, but they don't love me, so I have to eat them when I don't plan to go out, lol.


@mousiegirl  I wrote this down!  Thank you!!  Eggplant and my first ever salmon try.  I'll let you know how the food test goes.  I think my mother used to make breaded flounder every once in a while and it took a lot of sauce to get some of it down.  And I actually had no idea fish had bones.  So, boneless salmon it is!

So I am pulling up easy salmon recipes and I come across an article that says "Salmon is one of the most forgiving fish.  In fact, it's almost idiot proof."  LOL  We'll see... Smiley Very Happy

I hope you take this in the spirit that my post is intended . . . I did not grow up at all with seafood of any kind (I live in the midwest) so it is never my first choice of cuisine.  Through the years of growing up and expanding my palate, seafood is still not my favorite with salmon being on the bottom of my list.

 

A couple of years ago I was at the dentist office that somehow we ended up discussing this (please know I have no idea how this started).  Looking back it was hilarious as it was a battle royale between folks that enjoy salmon and those that don't  . . . all the while with my mouth hanging open like a carp . . . this has to be over five years old and I can still recall that entire afternoon . . . tee hee!

@Laura14  The key is not to overcook it.  I use the tip of a knife to pull it apart a tiny bit in the center to check, it should look moist and tender. Smiley Happy  The edges on a filet cook sooner than the rest, so I always remove them as soon as they are cooked so they won't get over cooked, and eat them while the rest is cooking. Smiley Happy

@momtochloe  @mousiegirl  I grew up on the ocean in Jersey and was the only person who turned up their nose at fresh seafood.  It's like not eating pizza in Chicago.  I was a disgrace to my community.  This will be my first foray except for tuna in my adult life.  We'll see if I stay teamMTC or teamMousiegirl.  LOL

Please know I would love to be able to enjoy salmon but I have never had it prepared that it was a good experience for me (along with a lot of other seafood dishes).  I told my doctor I would rather starve to death than eat salmon and he laughed out loud as he said I could have lunch with his wife . . . maybe it's a midwest thing . . . Smiley Happy

@momtochloe  Maybe.  I'm constantly threatening to move to Iowa because I love that state so maybe I got the Midwest gene too!

@Laura14 @momtochloe  My Dad was a chef, and fisherman.  He would take me with him at the crack of dawn to fish off SF pier, I stayed in the car until later.  He would catch crabs, and when we got home, he would chase my Mother and me around with the crabs, I don't approve, and then prepare crab cioppino, dump it onto newspaper with a stack of paper towels, and what a feast we had!  I love all shellfish and prepare it through the year.

 

There were no crabs last season, heartbreaking, as our Christmas Eve dinner is always marinated cracked crab with crusty garlic bread.  I prepared a pot of mussels instead.

@Laura14 I love Iowa!  My ex's kids live there and I loved every single second I spent there, great place to live!
