Did fix chicken breasts last night in the slow cooker. Had some packaged "Pulled" meat sauce and it was yummy - added ketchup, water and brown sugar per their instructions, tore the chicken apart and we had it over bread. Yummy. Also had some fried yellow squash with it - never had that combo before but we love both dishes and so it worked well.

 

Am freezing this morning - literally - 27 degrees here in my part of Sou Cal. We had rain - a lot of it - last night for a couple hours.

 

Davey is on minimum schedule through Thursday this week - tests galore. Monday's are usually a late start today but not today. Now I just have to go on line and see when they get out - of course Davey does not know. Sigh. They do not send "notes" home with hi schoolers out here - I do not agree but what can I say. LOL.

Good Morning all,

Where are you? I know this is a busy time but poor Winifred is all alone here!

 

I can't say much as I have been AWL. We left for early Christmas in Ohio on Friday and didn't return till yesterday. Had a very nice visit with everyone and this is what Christmas is all about, or should be!

 

Slept in this morning and my computer is acting as sluggish as I am. We both are tired I guess. I have chiropractor appointment this afternoon. Then will ring the bell at K-Mart at 4:00.

 

Need to pick up around here and put away things. Have everythig out of the car from the weekend but not unloaded. That will be my job today.

 

Winifred, it is raining here, Sorry, which I could send you some. Farmers say they will need snow or rain for the winter. We all forget about the needs for good crops.

 

Take care all, enjoy this season of celebration, slow down and enjoy.

lbettyboop, loved the pictures and you are so right - there go the decorations. LOL.

 

Freezing here again. This below freezing weather will continue through Wednesday and into Thursday but we may get up to the HIGH 50s on Thursday. Will not do a lot better for several days and then the temps plunge again. Last year this time we were sweltering - and we had rain again last night - always good.

 

Had leftovers - nothing much to write about. Glad to see Soushi back

Again, little to add. Davey and I will be the only ones here for dinner - of course all the four legged ones are moving about - so he can have a bowl of soup or a frozen dinner - whatever his heart desires. Me??? may have a tomato sandwich - am not cooking for the two of us tonight.

I had some soup and Davey had the frozen dinner - so much for that.

OK, did get to Foods 4 Less and buy some of those great Chuck Roasts. $3.57 a pound. That's a steal this day and time but must say I miss the $2.75 a pound of a year ago. Their beef is outstanding!!! Sigh. Bought 6 of them to the tune of $75.00 - am in great shape for my roasts now. Course I tossed one right in the slow cooker instead of pulling out a frozen one. Only had two of them left in the freezer. Have yellow and red peppers cut up with them - can you believe NO sweet onions this time? Have collards cooking and will bake my four paltry potatoes - that is all I have left and I did not realize they were about gone also. That will do us for dinner tonight.

 

Eggs disappear here quickly also so bought a rack of 18 - they sure have gotten pricey haven't they? When does it stop?

 

Davey on the way home from his friends - he has chores to do as tomorrow early a.m. is trash pick up. He has to haul out two yard waste containers - they are big - recycling container and a garbage container - four containers out at the street. Cat litter boxes must be cleaned including the one for the outside condo. Too cold for them to go out past three days but am hoping they can spend a couple hours out there tomorrow - we shall see. but it is also cleaned out like the two in the house. He has to also sanitize them with the chlorox wipes - that is after washing them. Always things to do.

 

Have a few pieces of cut up fruit we will finish up with dinner also - will not go to waste.

Morning all,

Yes, eggs are really expensive compared to last year. And we live in the Mid-West with chicken and egg farmers everywhere.

 

Have a Christmas party to attend tonight. Need to bring a gift for the exchange and food to share. Haven't decided on either one yet.

 

Cleaned out my cosmetic drawer this morning, That was a chore, tossed a bunch of old stuff and found things I forgot about. Showed me I have way too much "stuff".

 

Nothing much to share today. I might make cookies, I say might as it has been on my list for a week now.

 

Best to all, slow down and enjoy the season. Merry Christmas.

Morning All, heading to O'Hare today for Barbershop Quartet, then again tomorrow for Santa, so things at home are on hold, the week-end will be wild, need to do so much yet, every year I get slower.

Will pick up something for supper on the way home, maybe chicken, don't know yet

This looks good:

 Chicken and Stuffing Casserole

Ingredients:

  • 1 package Stove Top Stuffing (chicken flavor)
  • 1-2 lbs chicken breast, cut into small pieces
  • 1 can cream of chicken soup
  • 1/3 cup sour cream
  • 1 package (16  oz) frozen mixed vegetables
  • Salt/Pepper
  • 4-5 garlic cloves, minced

 

Directions:

  1. Spray a 9Ă—13 pan with cooking spray, set aside.
  2. In a bowl, combine the chicken, cream of chicken soup, sour cream, mixed vegetables, salt, pepper, and garlic. Stir until all is combined.
  3. In a separate bowl, prepare the stuffing as directed on the package.
  4. Pour chicken mixture into bottom of pan.
  5. Spread prepared stuffing over entire top of mixture.
  6. Bake in a preheated oven, 400, for about 30 minutes, or until chicken is cooked through.
