What's Cooking in your kitchen for June 2016

Good Morning one and all. Still have trouble with these months flying in and out - and this first week of June out here in my part of Sou Cal will be HOT by the end of the week. Then, the temps will dip again. Sigh.

 

Last night I warmed up skewers from the night before - minus the skewers of course - and heated it up with chopped potatoes. Actually very tasty. Still a lot of that mixture left so need to come up with something to use it in either for tonight or tomorrow - it was really good!!!

 

Soushi, we miss you and hope your days are easing a bit.

 

My energy levels are decreasing and I can tell it - cooking, while I love it, is just getting more and more difficult. Even when I lived alone - ahhhh, for the good old days - I still cooked decent meals. With my current house full, the energy seems to leave a lot quicker. Course I am getting older than dirt so what can I say. I hope to get a bit more help from the kids Mother/grandmother the rest of this week - I need it. Now if anyone can tell me how to get a 15 year old boy moving and doing something worthwhile, would appreciate it. LOL. Spoke briefly yesterday while waiting for Davey after school and he said he had never seen a kid as lazy as he is and he is failing that subject - this is in continuation school. Now that is lazy. Continuation school HAS NO homework so how easy can life be? He sits in class and does very little.

 

Hope one and all have a great day - may toss a roast in the slow cooker and this time toss in potatoes and another veggie with it. We shall see.

Seems like quite a few people are, or headed for, a heat waver. We will be 100 in a day or so. Sigh. I am NOT ready for hot weather quite frankly.

Morning all,

Sorry, I am having a hard time coming here to chat. Not sure why, but it is what it is. I'll try to do better.

 

Winifred, thank you for starting us up again. Sounds like you need help from your family. Guess it is time for a good sit down talk with everyone. Have no advice for Davey. Sure must be frustration.

 

I'm starting to do some baking again. Making this for 2 gals coming today to help me unload my china cabinet.

 

Amish Sugar Cream Pie 3/4 cup white sugar

1/8 teaspoon salt

2 cups half-and-half cream

1/2 cup whipping cream

1/4 cup brown sugar

 1/4 cup cornstarch

 1/2 cup real butter

1 teaspoon vanilla

 

In sauce pan combine, white sugar, salt, half-and-half and whipping cream. Bring to a boil. In another sauce pan, combine brown sugar & cornstarch. Gradually whisk in hot mixture into brown sugar mixture. Add margarine/or butter (to me this makes it even better.). Cook over med. heat, whisk constantly, 5 min or until thick. Simmer 1 minute and stir in vanilla. Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg. Bake at 375°F for 25 minutes.

Soushi, that looks really good - have never heard of it. Now that I have, I hope to try it. Glad to see you here and we do understand.

 

SO HOT yesterday - way above normal. Pulled a pizza out of the freezer - easy to fix and everyone loved it. Paul, friend of Shannon's replaced my sink top in the bathroom. Was very angry over that top which was ONLY 10 years old, Davey, being Davey broke it. Now that was hard to do and do not have a clue how he did it. The new top is a smidge lower up against the wall than the other one so will have to figure something out to cover the line of putty which was on the original one. Always something. But at least it did get replaced and believe it or not I did not pay for it. Miracles sometimes happen.

Morning All, good weather on the agenda for the rest of the week, 70's no rain, yippee!

 

@Winifred, sorry to hear about your sink, but glad you got it fixed, & at no charge!  I think Sushi's advice was on top, sit them all down & have a good "heart to heart"  Good Luck

 

@Soushi24 happy to see you back, I do understand what you're going thru, been there, done that, it's a long difficult road, just take it slow

 

Today I've vowed to stay home & clean/laundry, we'll see what gets done

Nice to see you Soushi.  I love that pie.   Very rich but so satisfying.  You want to eat it slow and savor every bite.   It makes my nose twitch.  

 

Glad you had help with your counter top, Freddie.  Wish someone could reach Davey.  

 

We we didn't get the promised rain. Darn.  Too hot this early in the summer.   Merle's out so its either cereal or a frozen dinner.  Right now cold cereal sounds pretty tempting.
