Yesterday, I made a slow cooker Chicken Quinoa Enchilada meal. I first cooked chicken breasts, skinless and boneless, then removed, drained, and set aside to cool before shredding.
A cup of quinoa, four cups of water, a can of enchilada sauce, can of diced green chiles, can of black beans, I waited until everything was almost done before adding the beans, chili powder and cumin, corn and salt/pepper. When it became too thick, I thinned it a bit with chicken stock. Once in a bowl, I covered it with cheese and zapped it in the microwave until melted. It was then topped with avocado, red onion, diced tomato, and fresh cilantro with a dollop of sour cream. Perfect for cool weather which it was yesterday, so easy, healthy, economical and tasty.
Definitely Fall weather now, so nice.

mousiegirl sounds good i would just omit advocado and sour creme. when i was younger i loved sour creme. i got older and some foods that i loved i cant deal with the flavor. cant explain what changed except age. my wife allways cracked on me for it and then she started changing to . we allways had a cat and she started getting alergic to cat hair laundry detergents and stuff like that.tonight just leftovers. hope all has a good night.

We enjoyed NY strips, baked potatoes and salad tonight; our last birthday celebration for the year.

@Pooky1 I use Knudsen's Lite, has a better flavor to me.
I get it re againg and things changing, taste and smell at the top of the list, and more. I am sensitive to odors/scents that I wouldn't have been when I was young.

Avocado Pooky1 - how can anyone NOT eat avocado. My daughter's husband (I miss that macho lovable railroader) had many avocado trees when he lived here in Ca and my parents and I would drive up to where he was and he would fill up the old big grocery bags full for all of us. I drove by his old house yesterday and the trees are still there. One day I will stop and talk to whomever lives there now. I miss him - and the avocados so very much - he died at 49 and my daughter died at 35. Just not right. THey moved to Kansas as the railroad - Santa Fe - shut down out here. So he had a choice quit or go to Kansas. He was devastated but he went. The home he livd in was his grandfather Emanual's. Pappy, the grandfather, adopted DAvid as a child and raised him. He too was a sweetheart. By the way Pappy was also a railroader. Figures does it not?
This is getting to be a habit but I had a great grilled cheese sandwich with Cole slaw for a late lunch - the slaw was made as usual but the different thing was small bits of apple and pineapple - never would have dreamed of such a thing but it was yummy. Davey has asked for a frozen dinner. LOL. Well tomorrow for sure as the two little ones will be back home, good food will abound. I went to Foods 4 Less couple days ago and got four huge boneless chuck roasts - they are soooo good. So will have that OR spaghetti tomorrow. Either will work.

when i was like 12. my aunt took me down town on the bus on friday the 13th.the outlet store was having a going out of business sale she saw a tan camal hair coat for 40 bucks. she didnt have enought money with her so we took bus to her sisters house to borrow money and back on bus to buy the coat. stop in a small place to get something to eat. while she wasnt looking someone took bag with her coat in it. when she realized what happened she swore and cursed all the way home.and since then i allways remember that on friday the 13th. preds love that picture it made me wright this story. hope everyone has a great weekend.

Hi All ----- not much cooking going on in this house.
A few years ago I was thrown from my horse and seriously injured my ankle/
shin. Since then it has acted up periodically and leaves me immobile. A few days ago my shin swelled to about 3 times its normal size so here I lie.
I'm being fed rotisserie chicken and wonton soup but today I felt like doing something for myself. Warning---the sound of it may make you ill but it was really not bad. The goal was to do something fast.
I browned some ground beef, added a packet of onion soup mix, garlic, Worcestershire sauce, black pepper, water, catsup and mustard. Mixed in a can of B&M baked beans and shredded cheddar and put an individual cup of Minute Rice in the micro. Would I make it again ? Probably not but, under the circumstances, it was okay.
Boy, @Pooky1, the prices at Dockside are awesome. I looked at their flyer on line and was very surprised. When I stock the Westerly fridge next spring, I think I'll go there.
@mousiegirl, the Mexican dish you made sounded outrageous. Made me hungry just reading about it. I am going to make some split pea soup as soon as I can get around. Since I don't have a slow cooker, it requires getting up and down to tend to it.
@Winifred, pot roast with carrots, onions, brown potatoes and gravy has to be one of my top 5 favorites. And always with a chuck roast ! Life without avacado and lemons would not be easy......

@Danky We ate the leftovers tonight, tasted even better. If you like it spicy, as I do, Sriracha works perfectly.

@mousiegirl-------speaking of leftovers........I woke up around 3:30 a.m. and my ankle was throbbing. In order to take Advil I had to eat something so what better than my leftover concoction ? The answer is "ANYTHING
would have been better !" It was palatable when just made but it did not improve with age. For the last 4 hours I've been on the edge of hugging the toilet bowl.
