@Winifred  My only desperate wish around here is Escarole. The South has never heard of it.  I found it once in the supermarket and almost died of shock.  They didn't have the price in the system when I went to the register and I had to spell it for them three times.  A produce truck must have taken a wrong turn that week.  Never saw it again.  Smiley Sad   


 

@Laura14  I find escarole in the produce market, but not elsewhere.

 

Gardening is my passion, and spend most of my days there, but as soon as my designs come to fruition, the big work will be done, and I can just maintain, no small task in a woodsy area with trees dumping constantly, and wildlife. Smiley Happy

 

This year, I grew several types of eggplant, zucchini, the sweet peppers, many types of tomatoes, and basil.  I grow perennial herbs which are as low maintenance as anything can be, but basil is only an annual.  The basil I froze will not go into soups, sauces, and for pesto down the line.  It grows into huge bushes as long as it is pinched back, and when I pinch, those tiny leaves go into my mouth, lol.  We ate so many tomatoes with fresh basil and fresh mozz this summer.  I just tasted a store bought tomato the other day, and no flavor at all, but DH likes tomatoes in salads, so with the dressing, one doesn't notice so much.

 

I replaced mayo with Dijon mustard, but some dishes require mayo.  I buy the Italian tuna at Costco, and eat it with cracked pepper, sometimes adding a bit of extra virgin olive oil, a good fat, or add Dijon, more flavorful than Starfish, etc.  I have prepared hummus and tuna with other ingredients and it was yummy, including diced tomatoes.  I think fresh herbs make a world of difference to pep up otherwise tasteless food.  I think Italian parsley would be good in tuna, but whatever one likes.

 

I made orange zest sugared pecans yesterday, and put a container in the freezer and one in the frig.  Now, if I can just discipline myself to not eat a ton, but they are addictive.  I havn't made them for decades, but every year I say at Christmas that I will.  This year, I was determined, and since they freeze well, I was able to get a head start.

@Laura14  Not really, lol.  My house is not as neat as it once was now that I am older.  I tend to do what I love to do first, gardening and decorating, then take care of the necessities such as cooking, laundry, etc., and if you notice, my cooking is very simple, not the marathons I used to do.  If I were working outside of the home, I would not have the time nor energy to do what I do now.

Had Orange Chicken, Sweet potato Fries and Turnip Greens for dinner. OK, so I am from the South, what do you expect. Very good.

 

Winds are super high today and saying that, two new fires have started. Do not like these winds and tomorrow and Friday, it will be near 100 - bad combo.

 

Take care everyone. By the way, almost have my ballot filled out. I only vote by mail any more and it is so much nicer and easier. We have 17 propositions on our ballot - just having about 5 is a nightmare. Am stuck on one but will figure it out and then off goes the ballot. Will be soooooooooooo glad when this election is over.

Hope everyone slept well last night. While I am sitting here freezing it is suppose to get very hot today - a good 20 degrees above normal for this time of year.

 

Was thinking of the really neat person who started this thread some years back - sure wish she would come back and say hi to us - she used the nick of Rabbit. Shirley, now tell us what is cooking at your home. She is a super cook and her home is warm and inviting. Also Soushi, hope things are getting better for you each and every day. Think of you all the time.

 

OK, so who is making Banana Bread today - I will be over. But please do not tell Yock you are fixing any.

Not baking bread but last night I baked my niece's birthday cake and brownies which I promptly forgot to bring into work for the coworker I baked them for.  Maybe I'll run home at some point.  

 

Ground some turkey and did a turkey bean burrito for dinner last night.  Haven't had meat in a while so it was good.  

 

Did a bean taco salad for lunch today.  I feel like this week has flown by and I just don't have any time for meal prep.  It's hurting me with lunch and dinner.  Definitely have to get on that this weekend again.
