I accidentally posted this in Back Fence a few days ago, brain cramp, lol.   'Tonight is spaghetti and salad for DH with sauce I made and froze, do the same with pasta sauces, make a large batch and freeze, and for me leftover green soup. Smiley Wink"

 

Last night, I made a meat loaf using ground pork, the leaner type, because it is what I use for my meatballs, but decided not to make those, a lot of work, so just made the loaf.  I added a combo seasoning bought at Costco, but am sure it is elsewhere, McCormick Bruschetta, Sweet Basil and Oregano, which also has bell pepper, onion, garlic, etc. in it, fresh diced onion and garlic, panko bread crumbs soaked in milk, and chicken broth drizzled over once it was in the baker, I pushed the meat around so the broth could seem in, and this produced a flavorful and juicy loaf.  I will be using some of the leftover meat, and there is plenty, in stuffed peppers with veges and herbs soon.

 

 I may freeze some of the loaf, we will see, but usually, the leftovers go fast in sandwiches and pasta sauce.

@spix  For years, we didn't get Spring, just went directly into hot weather, but finally, after years of drought, we have normal weather this year and a Spring, sunny, windy, and cool, a few very warm days here and there, not to mention a good rainy season, did wonders for the trees and shrubs.

Went to the gas station a little before noon - almost empty. YEAH!! Now that works for me. It was a busy day - nothing seems to change from that any more - Took the little one to Banning for a one hour visit with her Father - he gets one visit a week and I supervise. I was asked and decided I did not want to drive her down there, sit in the waiting room for an hour and then come back - I also want to watch him. I do NOT like him and am more comfortable watching him. Never fear however I am the epitome of graciousness and positive words to him to help him become a Father - if it should happen. Went to the pharmacy and got my bone medicine I take weekly, came home and listened to Shannon's mouth and Victoria showed up - she wanted Ricky for a few days - I ok''d it and told her she MUST check with me and NOT her Mom as I HAVE FULL CUSTODY OF THOSE CHILDREN. Seems Shannon had already ok'd it - It ain't easy people!! Can you believe they gave me custody - Tessa has messed up big time and I have said little as I am heartbroken as she had done so very well - at my old age. Course it is only temporary custody so we may have some heartache ahead of us. Enough of this.

 

Handed Davey and Shannon two frozen meals - am really tired, what is new - and Shannon says she will feed the little one. Leah is so precious and so good. The house will be quiet with Ricky gone but I sure love that little boy.

 

I am a tad hungry but not much - there is an avacado sitting in the kitchen - they make great sandwiches.

 

Hope one and all had a great day - I did get two loads of clothes washed earlier, hung them out and they are now in the basket waiting to be be hung or put in drawers - later!!

@Winifred  You are wonderful to take care of these babies, and everyone else that you do.  I had DD late in life, and my Doc said it would make me feel younger.  It wasn't long after she was born that I felt as old as the hills, lol, as it takes tons of energy to raise children, don't think I could do it now.  I don't know how you do it, but we do what we must, and the strength comes from deep within. Smiley Happy

I will be fixing this recipe tonight.  The first time I made it, DD took a bite, her eyes rolled, and she muttered OMG through a mouthful, lol.  I get the scallops at Costco, in the freezer by the fresh meat and fish, delicious.

 

Scallop Sliders

 

Ingredients
1 medium Vidalia onion, finely diced
2 tablespoons butter
2 pounds fresh sea scallops
3 tablespoons all-purpose flour
3 tablespoons bread crumbs
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 egg, beaten
1/2 cup finely chopped fresh chives
1/2 cup chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1 tablespoon grated fresh ginger
2 tablespoons vegetable oil
12 mini burger buns or small soft dinner rolls

 

Cilantro-Lime Mayo:
4 tablespoons fresh lime juice
1 garlic clove, peeled
1/2 teaspoon hot sauce (recommended: Tabasco)
1 teaspoon Dijon mustard
1 cup fresh cilantro leaves
1 cup mayonnaise
Salt and freshly ground black pepper

Directions
In a small skillet saute onion in butter over medium heat until translucent. Cool.
Place scallops in food processor and pulse until coarsely chopped or chop by hand. Transfer to large bowl and add remaining ingredients, except vegetable oil. Add in the cooled onions.Cook's Note: Mixture should not be too loose. If necessary, add a bit more flour or another egg.

 

Shape the mixture into small burgers, approximately 2 inches in diameter. Place on a waxed paper lined sheet tray, cover with plastic wrap and chill for at least 1 hour.
Heat 2 tablespoons vegetable oil in a skillet over medium heat. Add scallop sliders and cook until browned and cooked through. Place on small soft dinner rolls and top with a bit of Cilantro Mayo. Serve warm or at room temperature

Blend all ingredients in food processor except mayonnaise and salt and pepper. Process until cilantro is fine. Add mayonnaise and process just until blended. Season with salt and pepper, to taste
Cook's Note: This sauce is good with any seafood or fish, especially salmon.

@Preds  The trick with scallops is not to overcook them, not easy, but when they are cooked properly and are fresh, very sweet and tender. Smiley Happy
