Hi all,

Just be patient with me. I am slowly getting better. Yesterday was one month, so I guess I just can't rush this.

 

Went to lunch with daughter for Mother's Day. She had the Anderson Cooper book about his mother for me. I really want to read it, but not yet. Hard to stay focused . Just now able to read newspaper.

 

Just had a bacon, egg sandwich for brunch. I am not on a good schedule yet. I don't want anything till around 10:30-11:00 so that pushes lunch later and dinner even later. Don't always get in 3 meals. Snack on crackers and cheese.

 

Not much cooking. Will try to do better. Glad to see everyone's posts.

Went to Sam's today and came home with Bagel Bites. Guess what for supper??

Good one flbettyboop! Preds as usual, love y our greetings.

 

Another weird dinner at this home - worked for me just great however. Everyone else did their own thing - whooppee!! and I did mine. I had an avocado sandwich mid day and then warmed up the remaining pork, mashed taters and had a salad = I was happy.

 

Where is everyone else - come on people, I always get some good ideas here and I do get lonesome.

 

Very chilly this a.m. but it got a bit nicer as the day progressed. I stayed busy but it is tiring me out - Wish I had money to hire housekeepers, cooks, yard people and a general handyman. Oh dream on.

 

Hope all had a great day. Soushi, wanted to add I hope you are relaxing a bit. It doesn't get easy overnight - I understand that = but it does get easier to adjust. Just remember your DH is having a great time playing golf with some of the greatest and feeling good - what a blessing.

Last night, I fixed clam stuffed mushrooms, and of course, tweeked the recipe a bit.  I ommited the green onion and added a lot more garlic, and used Panko bread crumbs.  I had large crimini mushrooms from Costco, so I probably tripled the stuffing, and it just filled twelve.

 

 

 

INGREDIENTS
    • 8 -12 fresh mushrooms
    • 1 (6 ounce) cans clams ( drained and finely minced, save 1/4 cup of clam juice for stuffing)
    • 1 green onion, finely minced
    • 1 egg ( beaten)
    • 1/2 teaspoon minced garlic
    • 1/8 teaspoon garlic salt
    • 1/2 cup Italian style breadcrumbs
    • 1 teaspoon oregano leaves
    • 1 tablespoon melted butter, cooled
    • 2 tablespoons finely grated parmesan cheese
    • 1 tablespoon finely grated romano cheese
    • 2 tablespoons finely grated mozzarella cheese ( for stuffing)
    • 1/4 cup finely grated mozzarella cheese ( for garnish)
    • 1/4 cup melted butter
    • fresh parsley ( for garnish)
DIRECTIONS
  1. Preheat the oven to 350°F.
  2. Lightly oil a small baking dish.
  3. Gently wash and stem mushrooms; pat dry (Save stems for another recipe).
  4. Combine clams, onions, garlic salt, minced garlic, butter and oregano in a bowl and mix well.
  5. Add Italian bread crumbs, egg, clam juice, mixing well.
  6. Add Parmesan, Romano, and Mozzarella cheeses to the clam stuffing and mix well.
  7. Place approximately 1 1/2 teaspoons of the clam stuffing mixture inside mushroom cavity and slightly mound (You should be able to stuff between 8- 12 mushrooms depending on the size of mushrooms).

My goodness, everything looks good except the mushrooms. LOL. Maybe I could find something to do with all the other stuff - great combo.

@Winifred  The mushrooms almost disappear due to loss of water, lol.  You could use the stuffing in peppers, though I would partially roast them first or fry, unless you prefer stiffer peppers.

Thanks Mousiegirl - been thinking a lot today about all that good stuff. I LOVE peppers - will definitely try it that way. Thanks for the tip.
