I did write something yesterday however being the genius i sometimes am, I never posted it nor did i shut off my pc - I was tired I guess - well I was. Super hot day, the little ones felt better - thank goodness - but I sure was tired. Today even hotter and the temps keep climbing thru Thursday. Way too early for 100 plus temps - just should not happen, even out here. Air also very dirty and that is a rarity as this State has spent a fortune in getting the air clean and keeping it that way. Sigh. Have no clue what the future will bring.

 

Thanks for telling me about bjs, never heard of it and we obviously do not have them out here. Interesting.

 

We had super big burritos for dinner and before bedtime we had Popsicles and thank goodness neither kid got sick last night. Must have been those Popsicles before bed. House still very stuffy and warm and the little boy climbed into bed with me - that was a first!! Little girl did wake up about 1 in the morning and we moved to stretch out on the sofa - she went back to sleep but was a tad fussy for a short while - so much better than the night before. Now me? Would love to go back to bed but have changed the little one already so I know it is now only a matter of time.

 

Trying to come up with minimum cooking for a few more nights - the heat is so very bad and my AC window units are struggling and of course I do not want to run them 24.7 - suspect I would have trouble paying the bill the way the rates for electricity are out here. Sigh. But at any rate must think of something - well I do have a few hours to think on it.

good morning all.cloudy and very muggy down here and thunder storms exspected tonight. they dont bother me but maria and the dog are afraid of them. for dinner chicken parm and pasta. have a great day all and winifred try to keep cool.

I just made some haddock and crabmeat. I have so much left over, nobody likes seafood in my house.  More for me!

Hi everyone. I am a long time lurker and finally decided to post after reading your thread forever! It looks like you've lost some long time posters, and Winifred does such a great job keeping this thread going, so I thought, why not!

 

So anyway, yesterday I made chicken enchiladas for my hubby for Father's Day. I also made a marinated flank steak for tacos.  I have to say that they both turned out pretty delish!  Tonight my husband and daughter will eat leftovers and I will eat a piece of salmon.  I recently started Weight Watchers and yesterday was a splurge, so back to the healthy food today!!

Boy I get stupid some times. I welcomed the two new posters - I saw - Part Deux and 1905Salad and have no clue where my post went. I often mess them up when I try to get clever. I should know my limits. But at any rate, welcome one and all would love to see a lot of newcomers - and thru the years I have learned a lot on this thread started by Rabbit who lives in Virginia. I actually got to meet her aka Shirley - and some other posters who live nearby. We use to do things like that - can you imagine. Some we have lost as they went home, others have just stopped coming by - so very sad as they all were so creative.

 

I just bought an Air Fryer based on something I read here - cannot wait to try it and am sure I will use it often.

 

Horribly hot out here in Sou Cal - we are breaking heat records in many areas - do NOT like that. I am older than dirt and the hot and sticky stuff bothers me a lot. When I first moved here in 1960, we had NO HUMIDITY at all. Times have changed sorry to say.

 

Dinner tonight was Garlic chicken - by Bird's Eye. Super delicious and easy to fix. In this weather do not like and work extra hard to not be in the kitchen long. This dish was chicken, pasta, carrots, corn and broccoli. Thoroughly laced with Garlic - super good and we will have it again but I think next time I will have some Texas Toast with it. LOL.

 

Again welcome to all, hope to see some more "faces" here. Need all the help I can get.

Thanks Winifred for the welcome. I made pork chops, mashed potatoes, and I baked some fresh asparagus for my dh. I ate some seafood with asparagus. He has celiac diease and is lactose intolerant, plus other allergies. I usually cook two seperate meals. His meal is always the biggest challenge.  I think I may head over to the beach today, I have a good book I can read for an hour or  two, have a good day everyone.

Hi all!  Well, I am eating an early lunch today.  A couple chicken meatballs from Sam's Club (which are very good by the way!) with sauteed yellow and green squash and onions. I added a little Paul Newman's marinara and it tasted great.  I am trying to cut back on the amount of carbs that I eat and I have to say that I didn't miss them today!  Besides, the company that I work for is having a luau tonight for the employees, so I know that I will be eating a lot tonight.

 

Winifred, i have an air fryer that I bought around Christmas time and I use it often.  I make the usual french fries, onion rings and other frozen things, but I've also done pork chops, salmon and the chicken meatballs that I had today and everything has come out great.  Good luck with yours!  It sure beats putting on the oven on these hot summer days. 

 

We have a beautiful day here today compared to the heavy rain storm that we had last night.  My grass is very happy for the rain!

Sunday night, I made salsa verde and grilled pork loins slathered in my spice rub, and made tacos with refried beans as a base.

 

Last night, potstickers and snap peas came to the rescue.  Though I love cooking, hate clean up, on hot days cooking is the last thing I want to do.  I think I perspired a pound off of me yesterday as the scale was down, lol.  It's much cooler today, thank goodness, but will soon be hot again.

 

I think I will make seven-up biscuits, found a recipe recently, today and make little ham sandwiches for dinner tonight along with a salad.

Mousiegirl, your ham sandwiches sound good. Especially the biscuits!  Cutting down on carbs is not an easy thing for me.  I'll have to live vicariously through you!!

 

I have the larger Paula Deen air fryer.  I know some have had problems with the coating coming off the basket, but so far so good.  I hand wash mine so maybe that's the difference.
