Re: What's Cooking in June 2017

1905Salad, I LOVE egg sandwiches. I often fix one for my brunch or lunch and on occasion I have one later in the day often when I fix something I am not in the mood for or if it is a frozen food dinner which Davey loves and the little ones are not here.

Little ones are with Sherry right now - and I thank goodness for them being there as this heat sure saps my energy and she is A LOT younger than me. LOL. Isn't everyone? Speaking of the heat, suppose to only get to about 100 day - a cooling spell. It has been terrible!  And then perhaps tomorrow only into the 90s and then by Sunday, up over 100 again. This is usually our August weather not the normal cool and comfy June. What can I say?

I did not fix the black eyed peas - will definitely do them today. Also need to try and get some cleaning out done here today. It is such a big job and this house is really filthy. Carpets need cleaning, windows need washing and there are not enough hours in the day at my speed these days. And that Davey? He has become something else which upsets me a lot and he could be really great help but has gotten in such a dump. I want to get him to counseling but he refuses to go - so I just simply pick up a 200 pound spoiled young boy whose parents do nothing to help get him on track. Personally i strongly believe he should be in Juvenile Hall. We shall see I guess.

Hope one and all have a great day - everyone is sure eating well - always good to see that!!

Re: What's Cooking in June 2017

Winifred, I had another egg and cheese sandwich this morning, so filling!

I was doing laundry this morning and saw evidence of mice on the floor. I sent my son to the hardware store to get some of  those sticky traps. Now I'm cleaning out my food cabinet just in case anytyhing got in there, anything opened is in the trash. I'm very grossed out.

Today is my husbands birthday. He bought a gluten free cake mix the other day, I get the hint! Our other son gave him a gift card to Outback, so that will be an easy dinner for me!

Re: What's Cooking in June 2017

Hubby cooked tonight. He made pork tenderloin, baked sweet potatoes and asparagus. I really, really appreciate that he tried to make the meal healthy for me. Typically he would make white potatoes, corn and some kind of flavored noodles in the same meal! Ha, I am happy that he chips in with the cooking so I try to go easy on him : ) This weekend we have our nephew's high school graduation party. I offered to bring an appetizer but it's going to be hot and humid and I am having a hard time deciding what to make. If anyone has a suggestion I am all ears. I just might bring a big tray of fruit. Nothing better than watermelon on a hot day! Have a good night everyone!

Re: What's Cooking in June 2017

I really hat e to keep coming back here and telling everyone I lied again. Did NOT fix those Black Eyed Peas - shame on me but I have truly been super busy. Going to several places and just waiting, waiting and waiting. That is getting to be the common thread everywhere, i absolutely detest having to wait forever. Checks seem to be at a minimum everywhere and also in places you have to go to take care of something personal  . Geesh.

Cooling down now and that is good but today was another hot one but nothing like what we have been having. We shall see what tomorrow brings. They say it will not hit 100 but then I do not believe our weather people any too much anyway.

Kiddies will be back early tomorrow a.m, was not expecting them back so soon as I got a call from the people who check on them monthly saying they will be here tomorrow - am surprised as those ()*(^&^% people usually never let you know anything in advance. So I called them back and said fine, but after 10 a.m. Was looking for a few more days of peace and quiet and the ability to take care of some things - like personal for me. What a concept. Now I will have to see if I can get to church again Sunday - it is getting more and more difficult and that is so very important to me. Have learned however, many of us put our own priorities ahead of others and that is not all bad but just ask for this standing help on "Sunday morning. We shall see.

Had a pork sandwich - with barbecue sauce on it of course and some slaw and sweet potato fries. Now tell me, can you tell I am from the South.

As usual, enjoyed all the food being served elsewhere and how nice it is to have a hubby who cares and fixed something healthy!! Now he is a winner for sure.

Need to get a move on - have some things to do before I crash. Actually have a lot of things to do. LOL.

Re: What's Cooking in June 2017

Hope everyone is sitting down - YES INDEED, I cooked those black eyed peas - sooooooo yummy. Had a weird salad with them - pre-packaged but it looked interesting - and it was and it was good. Southwestern Salad. Had it's own sauce which was a glorified Ranch with pepper and some seasoning which gave it a bite - not much - but just enough. Also had a package of pumpkin seeds and tortilla chips - I did not use this added in. The dressing by the way was Cilantro - sure was good.'

Ricky ate some, Shannon and I also but Davey did not touch anything. That scares me as that means he will devour half of what is in the cupboards. Need to check to make sure most is locked up. LOL>

Finally cooled off a tad - heat was bad today - Sunday suppose to be super bad and the hottest days yet to come will be next week. They lied as this week was suppose to be it!!

Hope all had a great day.

Re: What's Cooking in June 2017

I've never made black eyed peas Winifred, but I think I would like them. Ate dinner out last night. I had crab stuffed shrimp, baked potato and delicious garlic butter green beans. Green beans aren't usually a favorite of mine but these were fresh and very good. Today I have a grad party, so no cooking for me except for a snack mix that I'm making to take with us. Tomorrow I'm not sure yet.

Less humid today after heavy rain over night. It should be a nice day. Have a nice weekend everyone!

@PartDeux

I like the idea of taking watermelon that you mentioned in an earlier post to the graduation party.  I would cube it and sprinkle Tajin chile-lime dry seasoning over the cubes.  It comes in a small 5 oz bottle.  This stuff actually takes watermelon up a notch or two.  You can also make your own by blending chile powder and lime crystals (or use lime juice) together,  Very delish and refreshing.

Re: What's Cooking in June 2017

Believe it or not Vabreeze I have Tajin in my spice cabinet. I never thought to put it on watermelon. I want to try It! The people at the party we are going to have never been known to be very adventurous so I don't know how it would go over. I actually ended up making homemade caramel corn that has cashews and bacon and I'm taking a chance with that! But, I am going to try it this week. Maybe tomorrow. Thanks for the suggestion!!

Re: What's Cooking in June 2017

I'm making shrimp, pesto and pasta for myself  this afternoon. The sauce is from a jar so it's extremely simple.  I am going to try for a bike ride before my dh comes home from work.  We may go to the movies.

Last night we went to the annual library book sale, I got 10 good books, I cant wait to read them. People read a brand new book once, then they donate them to the library.  They are all new releases in mint condition, 50 cents each!

@1905salad  I just donated about twenty boxes of books, along with tons of clothing, etc.,  to DAV which helps veterans.  I love books, but aside from gardening books and the like, I don't find time to read as I used to, and had read all of the books, except those from my Mother's estate, and I knew DD wouldn't read them, she has her own collection from High School when she had to read, not her favorite thing to do, so off they went.  Most charities around here will not accept books, and the few that do will only take two boxes at a time, but fortunately I found this charity.
