@ Winifred  Hope to join you often.  I love reading all the posts.  Not much happening on some of the other forums that I read.  I have been reading this one but not contributing.   Thanks for the welcome!!!  I need to start using the crock pot more often since I refuse to heat the house with the big oven.  I do have a small countertop oven that I bought from QVC years and years ago that I use quite often.  It has been a wonderful product and sure saves on the heat in the kitchen.

Morning All, we are starting a bad heat wave, supposed to be over 100 heat index with the humidity.  Not cooking today, going to our quarterly dinner with old friends always a fun time

Last nite had a beef roast that was tough, tomorrow will do it up with broccolli (sp) maybe that will help

 

@marky Welcome, glad you stopped by, hope you continue to visit, I agree about the crock pot, Winifred is a master with it

 

@Winifred those pork chops sound really good, I love pork.  You got a really good deal with the tree removal, here it would cost way more

I added a can of cream of mushroom soup and a little milk and then some water.  The potatoes are dehydrated so they need quite a bit of water to plump them up.  It was good but it cooked a little too long.  I should have had my hubby turn it off when he got home. It was a little overcooked.

Good Morning everyone - and as usual Preds, just love your greetings. Was horribly hot yesterday - actually horrible for two days now- and I was feeling really bad. Had to go out in it several times and it played a number on me. Did NOT fix anything as by dinner time it was just me and the little one here and I was not up to it.

 

Davey is returning home today - I think! He has been up north since he got out of school - I hope the time there with a friend of many years past, has helped him. He is not a happy young man but then he has to also help himself in that way. Say a prayer he will also do better in school - that is a must. He is so far behind now but the school he will be attending provides ample room for confused teens to move ahead quickly. He is now almost two years behind due to simply NOT doing school work and getting in trouble at school twice this past year yet it is possible he can still graduate early. He was promised a good job when he turned 16 providing his school work improved - that was a year ago and it only got worse. Not real smart. He use to be in the Gate program so we know he is smart, he is just super lazy and as his principal said, he is very depressed. Have tried to get him into outside counseling but he refuses to go. Sigh. He is a BIG boy so there is no way and  I can make him go - if only his parents would help more. He is fortunate in that he has both parents in his life but they do little to deal with him as a unified parental team. I have missed him but my food bill sure dropped a lot while he was gone. LOL.

 

Tonight must take the little one to watch her father graduate from high school. He is working hard to get custody of her and I give him credit - he is very young and has been quite bad quite frankly but he put his nose to the grindstone and is graduating from high school - yes he is very young - one entire year early. That took some doing. I understand he is super intelligent and he decided to apply that intelligence in the right area. Good for him. Suppose to be the hottest day of the year so far so hope I can make it. It will be outside at 6 p.m., the hottest time possible. Say a prayer. I could have refused to take her as I have temporary custody of her and while I do not care for him, I felt it only right to get her there as long as he is trying to turn his life around. That is not easy for a young person to always do but he is doing it.

 

Hope one and all have a good day - and hopefully our temps will drop a degree or two by tomorrow/???????? At 3 p.m. yesterday it was ONLY 108. Could not breathe out there. Am sure no big dinner here tonight due to the graduation - hopefully tomorrow.

Last night, I cut five black, small,peppers from the plant, sliced them, along with sliced onions, sauteed for a bit, then added the rest of the pork rib meat, then grilled corn tortillas, heated refried beans, beans down first, then shredded cheddar, then meat mix, and topped with my guacamole, and this was for DH.  I ate some of the veges on a tortilla, and finished the guacamole on crackers.

 

 Tonight either scallops, very low cal, or boneless, skinless chicken thighs, and what we don't have tonight, we will have tomorrow night.

@Winifred  It was very economical.  I got four different meals out of three racks of ribs, using what I have in the house. Smiley Happy  I use up a lot of leftover meat/poultry in tacos, tostadas, and burritos.  Of course, the Haas avocados, the best, are not inexpensive, but must have guacamole. Smiley Happy
