I belong in the psych ward but I made beef stew in my slow cooker. Don't ask me why. I was on a cleaning binge and it kind of went into the freezer where I had one package of beef tips left. It was the only thing I knew to do with them.
Cold beef stew for lunch today. Anyone want a bite in 95 plus degree weather? Anyone? ...

I think you are smart - stew actually tastes as good in hot weather as it does in cold. And secondly you made it in a slow cooker - makes sense to me as I swear by those things - you can cook ANYTHING in them. I use them all the time for some really strange concoctions - always works.
Yep, I'll join you! Now I would be frying some eggplant but the delay for me is I am on the fourth day of cutting back on electricity and just got the notice to do the same tomorrow - are they insane? My stove is electric so am trying to find other avenues - such as the slow cooker - but unfortunately FRIED eggplant is worthless in a slow cooker = and I MUST have it fried - my Southern raising really rears it's head when it comes to some things and fried eggplant is one. Bottom line for me is I have no clue what to eat for dinner - probably go out so I can shut off the appliances for an hour or so - every little bit will help.

Davey and I went out and ate Mexican. Brought taco salads home for the others. The little girl is not yet up to eating this food. LOL. Still is horribly hot here. Just awful. Am use to hot weather but for about a month most of the time we are considerably higher than our norms - that is what is bothering us so much.

@mousiegirl I am so glad to hear that! One of these days I'll splurge and take the plunge on a nice pan.
Went food shopping and Georgia Peaches are still MIA. We have SC peaches and the new arrival is California peaches. Yes, they shipped CA peaches to the Peach State clear across the country.
I decided to use up some of the chicken breasts I have in my freezer this week and make cutlets. I am also going to do past primavera (probably more like pasta and broccoli) and some big salads since there is no end in site for our ongoing 95 degree weather. I also bought corn on the cob which I haven't had in forever (I blame my recent trip to Iowa) and cucumbers to make cucumber salad.
Hopefully I'll finish out July with a healthy bang.
Came across a pork tenderloin recipe with orange marmalade I may take a stab it. Sounds wonderful but we'll see if I'm brave enough to try it at some point.

@Laura14 I thought soybean growing had overtaken corn. DH is from Iowa, and when we visited, his Uncle said the government was paying him to grow soybeans.
Cutlets are great. I also make them out of pork tenderloins, takes a bit of pounding the slices from the loin, but just as yummy as chicken, which we eat quite a bit of as it is lighter than beef, though do eat that a few times a month, lots of pasta dishes also, hardly ever with meat except the sausage and greens pasta, and once in a while a meat sauce. I cook a huge pot of sauce and freeze it in batches in Lock & Lock. It s great to have on those nights when I don't want to cook. I also make vats of different soups for the freezer, but that will be later when it cools off.

I use to live in Georgia and LOVED its peaches. Must admit now, however, after living in California since 1960 I have grown to love it's food products. Peaches are outstanding as is it's cherries, oranges - second to none - and avocados. Lots of other things. Only problem is the cost - absolutely outrageous. I remember growing up in NC and living in many places - my Dad was career army - fruit was always inexpensive. Times have changed - it is a luxury to buy fruit and avocados these days. Just not right.
We had pizza rolls for dinner- easy and quick to fix and filling.
