Morning all,

Had a fun night, we went to a Sock Hop at local center. Loads of old songs, plenty of 60's outfits, and a wonderful DJ. He not only sang many of the songs, he and his assistant came out in a variety of costumes. They did a a great job of entertaining us.

 

Light cooking here. Just sandwiches for lunch, beef slices with mayo and onion for us,.

 

Okay, you can have my share of the banana bread. Never been a fan of it. Enjoy.

Why am I not retired?  Oh ... I would have to stay home and cook.  LOL

Good Morning all,

 

Beautiful weather here all this week. I'm loving it.

 

Have plans to make these meatballs. Can't find my original recipe but this one is close to it.

 

Baked Meatball Parmigiana

Ingredients

1½ pounds ground beef

4 cloves garlic chopped

 

1 cup bread crumbs

1 cup shredded Parmesan cheese

2 eggs

salt to taste

Sauce of your choice

Mozzarella cheese

Instructions

Mix all of the above meatball ingredients and form your meatballs

 

Pour 1-2 Tablespoons oil on pan with sides and bake at 400 for 20 minutes.

Lower oven to 375

.

Pour some sauce in the bottom of your dish

 

Lay meatballs on top of the sauce. Cover with more sauce and top up with lots of mozzarella! It should be covered with cheese

 

Cover with foil and bake for 20 mins.

 

Remove foil and bake an additional 20 mins or until meatballs are cooked through and cheese is browning.

I'm still around @qualitygal.  Been a bad couple of months and I just haven't felt like being funny.  Just saying Good Morning has been a struggle, but time and faith will fix it.  I am a daddy's girl and I miss him even though I know he is still around and in such better hands now.  Heart

Hi Preds - I think of you and your Dad often - loosing a Dad is something one just does not ever get over. I retired as my very tough - but gentle - career army Father was coming down with dementia. I was so worried something would happen to him I retired actually before I had ever intended to. He lived yet another 5 years and the Dementia never got drastic but I am so glad I got to spend those last years with him. He was buried on his 90th BD - after fighting in three wars. I do understand.

 

Had cauliflower - buttered, broccoli - buttered - and the boneless porkchops that I seared and then put in a mixture of soy sauce, brown sugar, garlic, a tad of oil, beef broth and that was done on top of the stove - no slow cooker tonight. It was pretty good, Not sure I will cook it each week but it was different and not bad at all. Still try and use up all my veggies that are Fresh before they go bad - happens real easy these days. Had someone give me yet another head of cauliflower and bunch of broccoli.

 

We have had a ton of rain today -  yippee - hope all who need it are also getting some. Do hope New Mexico gets their share.
