Different things: saltines, matzos, corn flakes, bulgur wheat, Stove Top Corn Bread Stuffing, et al. ... depends on what seasoning I'm using, and what I'm serving with it.

I used to use cornbread stuffing mix. However, I don't make meatloaf anymore.

I use saltine crackers, I guess because my mom always does. She grinds hers finer than I do.

I use a variety of different types of breads in my meat loafs depending on the type of taste and texture I wish to accomplish.

What types I use:

My own fresh breadcrumbs made from my own freshly baked bread.

Home made slightly stale slice bread with ends and crusts removed, then soaked in milk and gently squeezed out and then with fingers torn into small pieces and sprinkle on to the meatloaf mixture.

Store bought sliced bread crust ends removed, soaked in milk and wrung out then sprinkled into the meat loaf mixture.

Stale breadcrumbs toasted with spices and a little butter and then allowed to dry. Pulse in Vitamix for a few seconds and use immediately with no leftovers.

Redi flavored 4C breadcrumbs.

Saltine crackers without salt

Panko Japanese Breadcrumbs.

Home made breadcrumbs seasoned with dried oregano, dried dill, garlic powder, onion powder and dried mint.....many times used for my own stuffed Greek ingredients type of meatloaf.

I've never used anything but crushed saltine crackers. That is what my Mother used.

I grew up using crushed saltines in meatloaf - the classic recipe with an egg, mustard, etc

I use oatmeal. You can buy Hunts Meatloaf sauce in the tomato sauce section. The recipe is on the can. It is very simple and the best meatloaf I've ever eaten. The recipe is very similar to the one that was on the oatmeal cannister for years.
