I love avocado just about any way you can slice it and dice it, but my favorite? I'm a bit of a purist and like many others can be perfectly happy to just slice it in 1/2, sprinkle on a little salt, and scoop it out of the shell with a spoon. Fiesta Lime Mrs. Dash is also tasty as a sprinkle, or lemon pepper, and we like onion salt, too.

Sandwich: chicken, lettuce, tomato, swiss cheese, avacado, mustard - Great sandwich!

Guacamole with veggies or chips

Blender with other veggies

On hamburgers

Side dish with eggs, pasta

One of my fave snacks is 1/2 an avocado sprinkled with kosher salt (or sea salt).Smiley Happy

Could you please share your guac sauce for pasta, much appreciated!

Here it is:

Linguine with Guacamole

Yields: 2 servings
Prep time: 15 min
Pasta cook time: 10 min


Ingredients:

6 ounces uncooked linguine pasta
1 ripe Hass avocado, peeled and seeded
2 tablespoons fresh-squeezed lime juice
2 large garlic cloves, minced
3 tablespoon prepared salsa
1 jalapeno chile pepper (stems, ribs, & seeds removed), very finely diced (optional)**
1 bunch fresh cilantro
Coarse salt to taste
Coarsely-ground black pepper to taste


Preparation:

Cook pasta according to package directions to al dente.

While the pasta is cooking, place the avocado, lime juice, garlic, prepared salsa, chile pepper (if using), cilantro, salt, and pepper into a food processor or blender. Process until mixture is smooth and creamy.

When pasta is done cooking, remove from heat, drain, and place the cooked pasta into a large serving bowl. Add the guacamole sauce and toss until the pasta is well coated. Season with additional salt and pepper, if desired.

Divide the pasta among 2 individual serving bowls or plates. Serve immediately.

Half an avocado with a little bit of salt and a spoon! I love 'em.

I put them on sandwiches, salads, Mexican food, grilled cheese, and anywhere else I can fit them in. And, of course, guacamole! So yummy!

Eat at least ONE-TWO every day.

Usually spread on toast (whole wheat or French Bread) or on a spinach tortilla.

In a medium size glass bowl peel, remove pit, and mash 1-2 ripe avocados

Be sure the ratio of EVO to Vinegar is 3:1

Add:

1-2 TBLSPs EVO (Costco Kirkland Signature Toscano from Tuscany in a glass bottle)

3-5 splashes of Aged Balsamic Vinegar (Whole Foods 365 Brand)

1/2 TSP Grey Poupon Dijon Mustard

1 TSP finely chopped Vidalia or Red Onion

1 Medium Tomato chopped

1/4 of 1 clove of fresh Garlic minced for a hint of flavor but no heat. If short on time, add a couple of shakes of Garlic Powder to mixture instead.

1 TSP of Organic Maple Syrup This minimizes the harshness of the mustard.

A grind of sea salt

A grind of coarse black pepper

Whisk all together and let sit for 2-3 minutes. Then spread on toast or a tortilla or use as a spread on a BLT.

Takes 5 minutes to prepare.

I live in California where avocadoes are plentiful. We eat them almost daily. I just slice them in half, flip out the pit, and eat the avocado with a spoon.

Guacamole Salad

Ingredients

· 2 ripe, Fresh Hass Avocados

· 1/2 Tbsp. lemon juice

· 1/4 small sweet white onion, minced

· 1/2 ripe Roma tomato, seeded and diced

· Shredded lettuce to taste

· Salt and pepper

· 1 Tbsp mayonnaise

Instructions:

1. Mash avocados with lemon juice in a bowl, leaving some chunks.

2. Gently stir in remaining ingredients and serve immediately.

I've never eaten avocado but I'm tempted now!

One question.....someone mentioned putting avocado in a grilled cheese sandwich. Since it's so creamy, will it melt along with the cheese?
