What is the spice or flavoring that makes Mexican food so good?

What is that flavor?  Like in Natchos, or other stuff that's SO good in flavor of Mexican dishes?  I don't cook much anymore, but I love those flavors. So does my husband.  Thanks.  What's your favorite Mexican flavored dish?

Perhaps cumin?  It has a deep smoky flavor.  When I use canned refried beans (Rosarita if you can find them) I add cumin, a little ancho chili powder, 1-2 teaspoons of bacon grease and diced red onion.  I love authentic Mexican food and would be hard pressed to pick a favorite!  Probably El Pastor tacos.

The flavors (or spices) of Mexican food vary by region.   You won't find the same taste in Arizona as you would in Texas, New Mexico or California or vice-versa.

I also think it's cumin.  A few months ago, I had to use ground cumin in a soup recipe.  The taste was very familiar and I couldn't exactly place it but I think it was Mexican.

Old El Paso Taco Original Seasoning 6.25 oz Canister ...

 

This is my favorite mexican food flavoring, i make 3# of hamberger drain the grease, add the packets, freeze some keep some out, i make taco salads, tostadas, burritos, nachos, it's our favorite, i tried knock offs, nothing compares.

Old El Paso Mild Taco Sauce, 16 oz - Walmart.com

 

This adds a lot of flavor too, i also add in a little greek yogurt to a taco salad.

It's most likely cumin.

 

Our favorite is proably chile verde - pork cooked with green chies and tomatillos - either as a soup/stew or thicker to make burritos.
