I just use a hearty bread with a good texture, process it with the chopping blade in the food processor and then add a small amount of butter to help with browning. The amount depends on how big the dish is. I don't do it on scalloped or au gratin potatoes though, I usually just top with cheese for that.

I agree with Jaxs Mom. Like her I don't do crumb topping on my scalloped potatoes but have on other casseroles...crushed Ritz with melted butter and also crushed up really fine potato chips.

Panko bread crumbs stay crunchy when baked as a breading for fish or chicken, when mixed with cheese and butter and topped on a mac & cheese casserole, and I think they would be great mixed with melted butter on top of scalloped potatoes. You can mix them with flour or corn meal for a breading. They have so many uses and they STAY CRUNCHY - which I LOVE!
Progresso makes them in Plain or Italian Flavor, but there are many brands. I like Progresso best.
