We are making Southern Fried Chicken with Country fresh garlic mashed potatoes topped with fried caramelized onions, and a nice Greek Feta Cheese Salad.

Dessert will be in a heart shaped Coeur la creme mold served with fresh strawberry sauce. Hubby's favorite and could not say no to making it.

Clean out the 'fridge night, since it's just DH and me who will be here.

GF Rotini w/meatballs and Italian sausage
Zuppa Toscana
Grilled chicken on a green salad

Once DH gets home, if none of the above sound appealing, there's always eggs in the house and I'll make us an omelet.

I have a sirloin steak defrosted which DH will make on the grill so I will roast some potatoes and make some carmalized onions and peppers and then maybe some peas.
