I call this "pickled pepper sauce", and this or chow-chow goes on collards or other cooked greens, not on blackeyed peas! On blackeyed peas, you put fresh chopped sweet onions. I have never seen pickled pepper sauce eaten on blackeyes.

Tabasco, Frank's Red Hot sauce, and the like I usually refer to as "hot sauce".

for me, pepper sauce= hot sauce.......tabasco, sriracha, franks, cholula are the ones i use.

for the item pictured we just call that either hot peppers or peppers.

If I read "pepper sauce" on a restaurant menu, like "steak with pepper sauce", I'd expect a sort of roux with black peppercorns. Steak au poivre, but with sauce.

Would never occur to me that it might be vinegar infused with hot peppers.

I love hot sauce! When I use the term, I mean more for flavor than heat, but I can take heat.

Dave's Ultimate Insanity is the hottest I've tried.

For our Christmas Holiday Lunch at work, a coworker, who makes hot sauce (the way you described pepper sauce) brought in some of his batch.

He said it was a 9. I said I never met a hot sauce I couldn't handle.

Everyone got quiet and I heard the theme from The Good, The Bad and The Ugly.

Get your flu shot...because I didn't.

I forgot to mention, Tapatio is the one I use like salt and pepper. Very mild heat and huge flavor.

Penzey's has dried peri peri peppers that I love in beans. DH thinks Frank's is hot, so I can't cook the way I like. I made beans and asked if he wanted any. He said no, definitely not. I put a bunch of peppers in it to my taste.

A few hours later, I heard a scream.

Never heard the term pepper sauce before. Hot sauce (specifically Frank's) is what goes on buffalo wings and many other things in my house.

Never called anything pepper sauce but I agree with lovestoteach about using it on black eyed peas. I had it on my New Years peas yesterday. I also use it on any kind of beans.
