When I say pepper sauce, then it means the vinegar that I have put over hot peppers, and let sit for months, until the vinegar has some heat to it, and the peppers have become pickled.....Hot sauce is what I call the likes of Tabasco (that I do not like), and I most often use the term cayenne pepper sauce (such as Frank's RedHot, or Crystal brand).......Pepper sauce is used on greens, and hot sauce is used for flavored heat.......What do you think of when someone says "pepper sauce".......

We call the hot vinegar for greens, peppered vinegar. I grow cayenne peppers and pull them while still green then pour the vinegar over. We also chop the fresh pepper with fresh spring onions and serve these raw on field peas, black eyed peas, pintos etc.

I automatically think hot sauce, which is one of the most unused condiments in our house.

I think the exact same thing as you, Forrestwolf. In fact, my elderly father used to make his own pepper sauce from peppers he grew in his garden. He eventually got really creative with his bottles. He died back in 2006, but I still have one bottle he made.....the pepper sauce is in a Crown Royal whisky bottle. HA!
