I'll have some sliced cheese with either crackers or sliced apples. Eggplant doesn't have much of a flavor on its own. It takes on the flavors of the sauces or marinades you use to prepare it.

I pop a mini pizza in the microwave or make scrambled eggs and toast with peach preserves.

I always have stew, homemade soup, or something in the freezer. I can always make a sad and add cottage cheese. I also have grilled hamburgers in the freezer to have with leftover grilled veggies.
If I'm tired, I throw things in the crock pot.

A two egg omelet with whatever I have in the fridge..ham, cheese, veggies
I keep NY strip steaks in the freezer. I defrost in microwave and broil...microwave baked potato and a green salad.

make a sandwich and sometimes add some soup i have in the freezer. everytime i make soup i put a few single serving sized containers of it in the freezer and i also buy schwans soups.

Lots of good ideas. Standing over a stove and making grilled cheese or eggs would be too time consuming for me if I'm tired.
I opted for cherrios tonight with a Schwans mint ice cream bar for dessert.

luvmyteddy - When I don't want to cook -- scrambled eggs and toast or a grilled
cheese sandwich with some fruit are two quick things I make.

A chicken breast, Greek yogurt with a banana and grapes.
Homemade soup from the freezer.
Marie Callender's frozen dinner. No artificial ingredients in those I buy and are low calorie...230-360, all have vegetables. Only 6-8 minutes in the microwave, very tasty.

Wow, if I was so tired that I couldn’t even fry a couple of eggs, I’d forget about eating and hit the hay.
