I just took the brisket out of the freezer to begin the thawing process. It'll take 48 hrs.  We're delivering it tomorrow.  

I made a good dent in the gift wrapping but not finished yet.  I have to do the bonus gifts and still need to organize the game prizes.  Gifts I ordered in plenty of time for DDIL and DSIL have not arrived yet.  I can see tracking info and both are documented as "arriving late".  It's frustrating.  Keeping my fingers crossed they arrive by Tuesday.   At least our friend received her gift yesterday that I mailed Wednesday.

 

I have chili soup thawing and will include the usual topping and a small side salad for lunch today.  A zero sugar yogurt for dessert.

I am making breaded chicken cutlets, stuffing and broccoli with cheese sauce for dinner. Have a great day all.

Good evening everyone. It was nice today and not really cold but wind picked up and its howling and getting cold out. Yestauday my brother and his girl friend came over for Christmas and we ordered food from chelos  restaurant. It was a good day.  Today we didn't eat with Anna .ria at a ton of wrapping to do plus still had computer stuff to do for work so ordering out she didn't have to stop to go downs stairs. DH is officially off work for the rest of the year!  This morning we're going to load up the car with our gifts, the brisket, and whatever else we can bring ahead to DD's, in order to make things a little easier on Wednesday.  We also have some last minute things to get at Costco and Sam's plus one or two other stops.  We don't have a lunch plan yet.  We may eat out, DD may join us, or we might come back home and figure it out.

Getting a grocery order today...that means Fried Catfish and Cole Slaw for lunch!  Publix has the best!

I'm struggling a bit with my kitchen remodel, and realize how much I miss my oven and stovetop!  Doing our best with what I made ahead and only using my toaster oven, microwave and crockpot.  

Tonight will be chili, salad, and crusty rolls.  With the holiday in the mix, the contractor will not be here the rest of the week after today.  He did offer to wait until after Christmas to start, but we were delayed a few weeks already, so I wanted him to start.  Maybe an error on my part, but.....the choice I made.  We will get through it.

Good morning everyone, and Merry Christmas Eve Eve! 🎄🌟

 

Our family get together is tomorrow afternoon/evening at our DD's & DSIL's house.  DH and I brought most of the gifts and some other things there yesterday. They will be having their personal family celebration early with breakfast and gifts.  The kids will leave to be with other family nearby during midday and come back when all of our family arrives.  DD isn't real experienced in hosting so DH and I are going early to help set up.  I have pulled pork thawing and today I'll be working on my food contributions; A LOT of glazed pecans (some to eat and some to gift each family), deviled eggs, cole slaw, keto version of strawberry "pretzel" jello salad, crockpot mac & cheese and assorted finger foods.  My plan is to prep all the mac & cheese ingredients but bring them all cold and do the cooking at DD's.  For the finger foods I'm making salami Christmas trees, Caprese toothpicks, and prosciutto wrapped mozzarella sticks.  Yes, we like our meat and cheese!  We aren't doing any big desserts.  Nobody wants them anymore.  DD has cheesecake bites and I picked up a small package of assorted cookies at Costco just so there would be something to offer.  

I have a ribeye thawing that DH and I will share, cut in strips and served over wedge salads for our lunch.

We are having homemade chicken soup with noodles and a small salad with balsamic vinaigrette and bleu cheese crumbles. Have a great day all.

Sometimes - all I want for a supper is something very simple, so tonight was a Macintosh apple and one of my favorites, Kerrygold cheddar. And a few pieces of Josh Early chocolates. 

 

Earlier, though, DH and I went out for omelettes.

Good morning everyone. We were getting a small amount of snow yestauday . they said air was so dry so we didn't get any just a little drizzle . Monday I made beef chow a in and put it over rice and we had it Tuesday night allso.just had mini muffins. Wanted something quick and easy.have a wonderful Christmas everyone.
