We went out, our usual Sunday date, to Outback Steakhouse.  But tomorrow will be the July 4 menu:  baby back ribs on the pellet smoker, potato salad and avocado caprese salad with balsamic glaze.

It is HOT today. Hubby and I have been running around for groceries. Neither of us feel terribly hungry but a Caesar salad with grilled chicken in a few hours will hit the spot.

No one over for eating at home yesterday. Days are gone when I can fix a meal for more than myself. I find that frustrating but it is what it is. Took my granddaughter and a friend of hers and we went to Applebee's in Banning after church.. Had not been there for a couple years now and the food was as good as ever. Very very good. I had a small rib steak with garlic mashed potatoes and broccoli. Very good meal.

 

Hot yesterday and another hot one today. We are getting too hot - started having August and September miserable hot and sticky days way too early. June was horrible and that usually is a good month - not bad at all but not nice this year.

Tonight we are having:

 

Leftover brisket from the 4th

Salad - about 1/2 of the veggies are homegrown!

Small bowls of strawberries (also freshly picked today) with keto whipped cream

 

Can't wait! Smiley Very Happy

I just put together next week's menu, with a few carry-overs from this week:

 

BLT and chips
Watermelon Gazpacho
Pasta Salad
Steak Salad
Radiatore w Sausage + Spinach

I was happy to get the last two heirloom tomatoes at the organic farm store yesterday so tonight we're having:

 

BLT's on wonder bread chaffles

Roasted or air fried broccoli

Beastly hot here, 92° with feels like 97° temps, humidity ... I'd rather be shoveling snow ❄️❄️❄️ at this point!

Enjoying a large mixed lettuces & spinach salad, pick your toppings ... peppers, radishes, cucumber, red onion, tomato, hard boiled eggs, sliced cheese, grilled chicken breast. Eyeing some watermelon for later.

Stay cool everyone stuck with this terrible heat! Relief is in sight though. Weatherman is calling for a pneumonia front later this evening, temps to drop by 20+ degrees ... YES!!

@MOMMAVik  Your tossed salad with grilled chicken sounds delicious!  That's one of my regular go-to's.

It'll be lunchtime in an hour or so.  Today I'm having:

 

*Salad (spring mix, spinach, sliced cukes, sliced mini peppers, Kalamata olives, grape tomatoes, bleu cheese, SF dressing)

*Hard Boiled Egg with everything bagel seasoning 

*Cold Brewed Iced Latte

*Organic Dried Coconut Chips

*A few assorted fresh berries

 

Tonight's dinner:

*Homemade Naked Buffalo Wings

*Celery sticks with Bleu Cheese Dressing

*Roasted Cauliflower

Happy Friday & weekend ahead! Costco hot dogs, our son's favorite, on the grill, potato salad & corn on the cob for dinner. Pickles, sliced onions & sport peppers to top the hot dogs. Watermelon later on, if we have room left in our stomachs!

We have beautiful weather here, able to give the air conditioning a well-deserved rest. I hope it lasts til fall gets here ... ha! ha!
