Potato salad is a favorite here.  I also like macaroni salad, but my hubby does not!  

Once we get some fresh garden tomatoes, are favorite is chunks of tomato, onion and fresh mozzarella,  tossed with extra virgin olive oil, balsamic vinegar and some salt & pepper.  I can't wait for tomatoes!

Iceberg and swiss chard salad with mango, tomatoes, bell pepper, onion or shallot, cucumber, radish and lots of herbs: a good mix of: chives, basil, oregano, mint, and tarragon chopped and added, salt and pepper on the salad.  

 

I make a simple dressing of dijon honey mustard, oil and vinegar or lemon juice, garlic, salt and pepper and sometimes a splash of Tabasco green hot sauce.  

 

I will add tuna, sardines, ham, turkey or chicken for a lunch.

@KathyM23 ........Your taco salad sounds really good.  Do you have a receipe you follow or do you just guesstamate?

@Imaoldhippie  DH started making it when we used to have alot of family reunions and potlucks so he make quite alot at a time.  Everyone always requested that we bring taco salad.  I just asked DH and the normal amount would be 1lb ground sirloiin season with taco seasoning or not, 1 head of lettuce, 1 carton of cherry tomatoes, 2 pks green onions, 1 can kidney beans, 1/2 to 1 pack of taco cheese to taste.  Put the catalina dressing on at serving time to keep the lettuce from wilting, then chrunch up taco chips on top.  You can vary the amounts of ingredients to your taste. This amount makes about six to eight servings. Hope you like it.

@Knit-Chick  My husband loved a tomato/mozz salad.  It was one of his summer favorites.

@CrazyKittyLvr2  I don't make macaroni salad that much any more due to diabetes.  The last time I made it, I went online and most websites called for mixing the salad when the pasta was hot.  I never liked doing that ......seemed like I used a lot more mayo that way.

@cindyNC  I've never mixed mac salad or potato salad while everything was still warm.  Warm mayo sounds really bad even though it will chill eventually.

 

I don't make it often as it is not DD's favorite and after a couple days of it I'm good.

 

Same with potato salad 2 or 3 times from Memorial Day to Labor Day and I'm over it til the next year.

I stick to a green salad all year.  Put most anything in that seems appealing.  No rules.

 

The only indulgence I have is using oil and vinegar from a special store.  So worth the price to make a dressing.  

 

Years ago when I first was feeling it out, I could not believe that sipping vinegar was a thing!  But it sure can be.

It' s perfectly alright to mix potato salad or pasta salad ingredients warm.  It helps the flavors to mix together.

 

Mayo has lemon in it and will be fine when the mixture is refrigerated.

 

My major included a lot of chemistry and food science, although I embraced the design side more strongly.
